What is a good rice pudding recipe? Also any variations on this recipe?!


Question: APPLE RICE PUDDING

3/4 cup rice
2 cups milk
4 tablespoons butter
3/4 cup sugar
1/2 teaspoon cinnamon
5 apples

Wash rice well. In the top of a double boiler, bring milk to a boil. Stir in rice and continue to cook until thick, stirring occasionally. Cream together butter and sugar; add to rice. Add cinnamon and cool.
Peel apples, cut into thick slices, fry pieces in butter until lightly browned on both sides.

Place cooked rice in an oven proof baking dish, making a depression in the center, and fill with fried apple slices.

Cover with Meringue and bake at 350°F for 15 minutes or until Meringue is lightly browned.


Meringue:

3 egg whites
1/3 cup sugar
1/2 teaspoon vanilla

Beat egg whites in a clean bowl until foamy. Gradually add sugar, beating until mixture forms stiff peaks. Stir in vanilla.

1 cup arborio rice (about 6 1/2 ounces) or medium-grain white rice
2/3 cup sugar

1/4 cup finely chopped crystallized ginger (about 1 1/2 ounces)
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon ground allspice
Unsweetened whipped cream
Stir milk, rice, sugar, and salt in heavy large saucepan over high heat until sugar dissolves and mixture comes to boil. Reduce heat to medium-low and gently simmer uncovered until pudding is thick and rice is tender, stirring frequently, about 45 minutes. Mix in ginger and spices. Spoon warm pudding into bowls; top with dollop of cream and serve.

You need to use pudding rice, not Arborio, that is for risotto.. and put the rice, milk, sugar and little specks of butter on the top, into and ovenproof dish, grate some nutmeg onto the top and put into the oven on a low heat, about gas 2 or 3, 300 to 325F or 150 to 170C but keep and eye on it. it needs at least 1 hour and a half to two hours, but keep your eye on it, it needs to be lovely and squishy, if it starts to thicken too much, you have failed.. it is not an easy dish to get right.. I know, I have failed sometimes..
