HAWAIIAN WEDDING CAKE
1 box of white or yellow cake mix
1 - 8oz cream cheese
1 - 6 oz (large size) instant vanilla pudding mix
2 1/2 cups milk.
1 - 16 oz. can of crushed pineapple
1 - 8 oz. container of cool whip
Chopped pecans
1 box of white or yellow cake mix, make according to directions, and put in a sheet cake pan. Sometimes your oven broiler pan is the same size. Bake 350 for 20 minutes or a minute or so less.
Beat cream cheese, pudding mix, and milk until thick. Pour over COOLED cake. Next top with one 16 oz. crushed pineapple which has been drained extremely well. I press it down in a bit into the pudding mixture. Top with an 8 oz. container of cool whip and cover with chopped pecans. Must be kept in the refrigerator. I think it even tastes better the next day.

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease one 9 x 13 inch pan.
In a large bowl, mix sugar, soda, and flour by hand. Mix in eggs, pineapple with juice. Stir in nuts, and coconut. Pour into prepared pan.
Bake for 35 to 40 minutes. Cool on wire racks.

I made it with cream cheese frosting and I put a little coconut in the frosting and the whole thing tasted great! I hope everyone at least gives this recipe a shot. Talk about an addicting cake.

Everyone in my home goes 'crazy' every time I bake it. Ms. (?) Grieshop did a wonderful thing by deciding to share this one! I tried English walnuts the first time, but did not like it as well as the black walnuts in the second one. Perhaps M. Grieshop should add a suggestion to the recipe as to which nuts work better.....? However, this 'typo' in no way detracts from the easiness and quickness experienced with baking this cake. HAWAIIAN WEDDING CAKE

2 c. flour
1 1/2 c. sugar
2 tsp. baking soda
2 eggs, beaten
1 c. chopped nuts
1 c. coconut
1 (20 oz.) can crushed pineapple with juice

Sift together flour, sugar and baking soda. Add and blend (don't beat) the remaining ingredients. Pour into greased 13"x9" pan and bake 40 to 45 minutes or until golden brown at 350 degrees.

ICING:

1 (8 oz.) pkg. cream cheese
1 stick butter
1 1/2 c. powdered sugar
1 tsp. vanilla

Beat until creamy. Ice while warm.

READY IN 1 Hr

INGREDIENTS

* 1 (18.25 ounce) package yellow cake mix
* 2 (20 ounce) cans crushed pineapple, drained
* 1 (3.4 ounce) package instant vanilla pudding mix
* 1 (8 ounce) package cream cheese
* 1 (8 ounce) container frozen whipped topping, thawed
* 1/2 cup flaked coconut
* 1/2 cup chopped walnuts
* 1/2 (10 ounce) jar maraschino cherries

DIRECTIONS

1. Prepare and bake cake mix according to package directions. Bake in a 10x15 inch pan. remove from oven and allow to cool. Spread drained pineapple on top of cooled cake.
2. Prepare pudding as instructed on package and set aside. In a medium bowl, beat cream cheese until smooth. Mix in the prepared pudding. Fold in the whipped topping. Spread evenly over the pineapple.
3. Sprinkle top with coconut, chopped walnuts and maraschino cherries. Store in refrigerator.

Wedding cakes in Hawaii are very much like wedding cakes all over. The real difference is in the decorations. Instead of roses you will find island flowers like plumeria, hibiscus (the state flower) puakenikeni orchids to name a few. You might make fondant flowers.

Both recipes I saw here use cream cheese. Cream cheese is not really big on the islands.

You may want to add coconut between the layers

If you use nuts make the macadamia nuts they grow on the islands
