I am looking for recipe for zucchini cookies.?!

ZUCCHINI BUTTERSCOTCH COOKIES

1 1/4 c. packed brown sugar
1/2 c. soft butter
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cloves
1/2 tsp. nutmeg
2 eggs
1/4 c. milk, omit if using frozen zucchini
2 1/2 c. flour
1 tsp. cinnamon
1/2 c. chopped nuts
1 c. shredded zucchini
1/2 c. raisins
1 c. butterscotch chips

Cream sugar and butter; add eggs, milk; beat well. Mix and add dry ingredients. Stir in rest of ingredients. Drop by spoonfuls on greased cookie sheet. Bake at 375 degrees for about 12 minutes.

ZUCCHINI COOKIES

1 cup grated zucchini, undrained
1 tsp. baking soda
1 cup sugar
1/2 cup butter
1 egg
2 cups all-purpose flour
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. salt

Mix above ingredients together in large bowl. Sift together the following dry ingredients and add to first mixture - 2 cups flour,1 tsp. cinnamon, 1/2 tsp. cloves and 1/2 tsp. salt. Stir well and add 1/2 cup chopped nut meats and 1 cup raisins.

Drop by teaspoon on cookie sheet and bake at 375 degrees for 10-12 minutes or until light brown. Makes 3 dozen.

Zucchini Cookies

INGREDIENTS:
3/4 cup butter
3/4 cup granulated sugar
1 egg
1 teaspoon grated lemon peel OR 1/2 teaspoon lemon extract
2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup shredded zucchini
1 cup chopped walnuts

Lemon Glaze:
1 cup confectioners' sugar
1 1/2 tablespoons lemon juice

PREPARATION:
Cream butter and granulated sugar; beat in egg and lemon peel or extract. Stir in sifted dry ingredients, then mix in zucchini and walnuts. Drop on greased baking sheets; bake at 350° for 15 to 20 minutes.

Glaze cooled cookies with the lemon glaze or your favorite glaze or icing.
Makes about 2 to 3 dozen cookies, depending on size.

Whole Wheat Zucchini Bars

Ingredients:
3 eggs
1 cup sugar
1/2 cup brown sugar
1 cup vegetable oil
1 cup whole wheat flour
1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla
2 cups shredded zucchini
1 cup golden raisins
1-1/2 cups powdered sugar
1/4 teaspoon cinnamon
3 tablespoons butter, melted
2-3 tablespoons milk

Preparation:
Preheat oven to 350 degrees F. In a large bowl, beat eggs until combined. Add sugar, brown sugar, and vegetable oil and mix well with wire whisk.
In another bowl, combine whole wheat flour, all purpose flour, baking powder, salt and 1 teaspoon cinnamon and mix well. Add to egg mixture and stir just until combined. Add zucchini and raisins.

Spray 9x13" pan with baking spray. Pour zucchini mixture into prepared pan. Bake at 350 degrees F for 40-55 minutes or until bars are dark golden brown and toothpick inserted in center comes out clean. Cool bars completely in pan on wire rack.

In small bowl, combine powdered sugar with 1/4 teaspoon cinnamon, melted butter, and enough milk to make a thin spreading consistency. Spread over cooled bars, and cut into squares. Makes 36 bars

ZUCCHINI - CHOCOLATE CHIP COOKIES

1 c. brown sugar
1 egg
1 tsp. vanilla
1 1/2 c. flour
1/4 tsp. salt
1/2 tsp. baking soda
3/4 c. oatmeal
1/2 c. coconut
6 oz. chocolate chips
1/2 c. nuts
1/2 c. butter
1 c. zucchini, shredded

Beat butter, sugar, egg and vanilla. Add all dry ingredients and oatmeal; mix until smooth. Add coconut, chips, nuts and zucchini; mix well. Drop by spoonfuls (same as chocolate chip cookies) on greased cookie sheet. Bake at 350 degrees for 10 minutes.

Soft Zucchini Spice Cookies:

1/2 cup butter or margarine, softened
1 cup brown sugar, packed
1 egg
1 3/4 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon cinnamon, ground
1/2 teaspoon salt
1/4 teaspoon nutmeg, ground
1/8 teaspoon cloves, ground
1/4 cup milk
1 1/2 cups zucchini, grated
1/2 cup walnuts, chopped
1/2 cup raisins
1 teaspoon orange rind, grated

In a mixing bowl, cream the butter and brown sugar; add the egg and mix well.
Combine the dry ingredients; add alternately with milk to creamed mixture. Stir in zucchini, nuts, raisins, and orange peel.
Drop by teaspoonfuls 2" apart onto greased baking sheets.
Bake at 350 F.
for 12-14 minutes or until edges are lightly browned and cookies are set. Makes about 4 dozen.
