This recipe serves twenty or so Pesto Torte: Three pounds of cream cheese softened. Add 1/2 pound grated Parmesan cheese ( not the stuff from a can freshly grated if possible). Two tablespoons black pepper mix the three ingredients together. Line a bowl with plastic wrap pat about two thirds of the cheese mixture into the lined bowl to form a rough bowl. Fill with home made or purchased basil pesto. Cap off with the remaining cheese. Chill overnight. Top with sun dried tomato pesto serve with crackers or make little garlic toasts.

o.k.-this is the best appetizer you will ever have!you need some large scallops and/or large shrimp and a package of bacon.i like the thick cut.cut the whole package of bacon in half.wrap a piece of bacon around the scallop or shrimp.place on foil covered pan and bake at350 until bacon is crisp. i have tried frying them but you have to be careful to cook the bacon all the way through.if you can wait let them cool.enjoy!
This recipe dates back from the University Club in Houston in the early 70's. Having tried many others, this is the one I always go back to.
Chili Con Queso
1 med. onion, sliced thin
2 T. real butter
1 ( 10 oz) can Rotel
1 ( 5 oz) can evaporated milk
1 ( 8 oz) box Velveeta
Saute onions in butter until limp but not brown. Add Rotel with liquid. Cook until almost all liquid has evaporated. Add milk, stir until smooth. Lower heat and add cheese cut into chunks. Stir until smooth.
BAKED BRIE IN PUFF PASTRY
1 sheet Pepperidge Farm puff pastry - thawed
1 Brie - about 1 lb. in size
1 egg yolk mixed with
1 tsp. water
Set out frozen puff pastry about 20 to 30 minutes before ready to use.
Roll out pastry to 1/8" thickness. Cut off a 4" strip and set aside to use as decoration.
Place Brie in center of puff pastry and bring up edges and crimp edges together around Brie, sealing completely. Turn Brie - crimped dough side down on a baking sheet. With remaining 4" of dough left cut out leaf design or anything you may want to use as a decoration. Place on top of dough covered Brie. Refrigerate until ready to bake. This can be kept overnight for your convenience. Just cover with plastic wrap.
When ready to bake - remove plastic wrap. Mix egg yolk with 1 teaspoon water and brush entire dough covered Brie.
Preheat oven to 400 degrees. Bake for 15-20 minutes. Remove from oven and let set 20-25 minutes before serving
This is more of a party type appetizer, but one of my favorites.
Chili Cheese Dip
Using 9 Inch round or square pyrex (or similair oven safe dish) place in bottom of dish 2 12 ounce packets of cream cheese, spreading out to cover whole bottom evenly. Then use 2 12 oz. cans of can chili (hormel, or stag with meat or without) and pour over top of cream cheese. Then cover chili with shredded cheddar cheese (or the mexican blend cheese works just as well) enough to cover entire chili. Then either microwave on high or place in oven and bake till cheese melts completely. I usually top that when it comes out of the oven with different things, depending upon mood. Sliced black olives, diced onion, sliced jalapeno..whatever floats your boat...but is family and friends favorite for parties and football games.
ok this is simple, you get pastry dough and hot dogs.
cut the pastry square in to 2 medium triangles,
cut the boiled hot dog into 4-6 pieces(whatever you prefer)
adn place in pastry square, and wrap.
brush with egg wash, and place in oven using baking directions from the pastry box, or until brown and flaky
