I want some ideas on how to cook snow peas?!


Question: Rather than just boiling them in water, I thought It might be nice to maybe add something different or do something else with them. Any ideas??

1. Bring water to a boil
2. Put peas in water
3. Squeeze fresh lemon juice over the pot.
4. When they are done, take them out.
5. Sprinkle paprika, oregno, and salt on them.
6. Eat!

SESAME SNOW PEAS IN APRICOT SAUCE

2 tsp olive oil
3 garlic cloves, peeled and minced
1 tbsp sesame seeds
1/3 cup sliced, dried apricots
1/2 cup apricot preserve
1 tbsp bragg’s soy sauce
1 tbsp dijon mustard (or regular)
1/2 lb (250g) snow peas, trim ends
tofu (1 medium package), or 1 lb chicken
1/2 tsp grated fresh ginger

In a large frying pan over medium heat, add oil. Add garlic and sauté for 1 minute. Add chicken if that is what you want, and cook until no longer pink. Or add cubed tofu and cook for 2 minutes.

Add the sesame seeds and sauté for 2 minutes. Add the apricots, water, apricot preserve, soy sauce, mustard and ginger. Bring to a boil.

Reduce heat to low and simmer for 5 minutes. Add snow peas and simmer until tender-crisp, about 5 minutes. Can be served with rice.

SNOW PEAS STUFFED WITH CRAB

1/2 pound fresh snow peas
12 ounces crab meat, well drained
2 hard-cooked eggs, finely chopped
4 tablespoons mayonnaise (more if needed)
1/4 to 1/2 teaspoons prepared horseradish or to taste
3 dashes of hot sauce or to taste
2 teaspoons capers, drained and minced
3 tablespoons celery, finely choopped

Wash and clean snow peas. Split peas on top side, leaving bottom intact to form a little boat. Blanch in lightly salted boiling water for 10 seconds, then submerge in cold water for a moment. Remove and drain.
Set aside to cool.

In a medium bowl, add crab meat, eggs, mayonnasie, horseradish, hot sauce, capers, and celery; mix very gently so as not to break up crab meat.

Stuff snow peas generously with crab meat filling (about 1 heaping teaspoonsful of each snow pea).

Chill in refrigerator until ready to serve.

Makes about 24 stuffed snow peas.

I like them steamed.

They are very yummy in stir fry or simply sauteed in a bit of olive or peanut oil with the herbs of your choice.

My mother used to make a basic white sauce, or bechamel, and serve it over cooked new potatoes and snow peas. It was just creamed potatoes and peas, seasoned with a little salt and pepper, but we loved it.

I also do snow peas and toasted almond slivers, rather like green beans almondine, except with snow peas. Just the lightly boiled or steamed snow peas, toasted almonds, a touch of salt, and just a hint of garlic butter, easy on the garlic. The toasted almonds really give the snow peas a special flavor and texture.
