This recipe says hot!
1 (10 ounce) package frozen chopped spinach, thawed and drained
3 (8 ounce) packages cream cheese (soft)
1 can water chestnuts (drained)
1 cup sour cream
2 packages hidden valley ranch dressing mix
8 slices American cheese (cut in pieces)
8 ounces shredded colby-monterey jack cheese
1. Add first six ingredients in microwave safe glass bowl.
2. Mix well.
3. Heat on high two minutes and mix again.
4. Continue heating on low to medium heat until hot.
5. Add shredded colby- jack mixture. You could subsitute different cheeses, such as cheddar.
6. Heat until hot and cheese melts.
7. Note: You can also use beaters to mix ingredients.
It basically sounds like a cheesy version of spinach dip. I would definitely recommend serving it hot and nice and gooey. Hope this helps!

BONGO BONGO DIP
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (8 ounce) packages cream cheese, softened
1 can water chestnuts, drained and chopped
16 ounces sour cream
1 packages Hidden Valley Ranch Dressing Mix
8 ounces shredded Colby Monterey jack cheese (reserve about 1 ounce of cheese)
Preheat oven to 350 degrees.
Beat sour cream and cream cheese together; add all other ingredients except the reserved cheese. Hand stir the ingredients with spatula or spoon. Do NOT use mixer as the spinach will turn the dip green. Spread the dip into a baking dish, sprinkle reserved cheese on top.
Bake for approximately 30 minutes or until cheese is bubbly.
Serve hot with toasted French Bread or toasted Garlic Bread slices.
