Any good mulberry recipes? need inspiration?!
Answers: just bought a house with a whopper of a mulberry tree, im just after some inspiration for cooking them as nice treats!!!
You can substitute them for the berries such as raspberries, blackberries or blueberries in most berry recipes such as Raspberry Pie, use them in pancakes, dry them and add to cookies or breads, use in place of blueberries in quick breads and muffins mix with other berries to make a mixed berry filling for pies, cakes, cookies, pound cakes, etc.
RED RASPBERRY PIE
4 c. raspberries, picked over
1 c. granulated sugar
1/4 c. Creme de Cassis (black currant liqueur)
4 tbsp. cornstarch
1 tbsp. fresh lemon juice
Pinch of salt
1 recipe pie crust
2 tbsp. butter
3 paper-thin slices lemon
Preheat oven to 425 degrees.
Toss raspberries and sugar together in a mixing bowl. Whisk Cassis and cornstarch together in a small bowl until smooth. Stir Cassis mixture, lemon juice and salt gently into berries.
Roll out 2/3 of the pastry and line the pie pan; leave edges untrimmed. Spoon in the berries, dot with butter, and arrange lemon slices overlapping slightly in the center of the berries.
Roll out remaining pastry into 10-inch round and cut into 1/2-inch strips. Arrange over berries in a lattice pattern. Trim overhanging pastry; bring edge of lower crust over lattice and crimp edge.
Set on the middle rack of the oven and bake at 425 degrees for 15 minutes. Lower heat to 350 degrees and bake for another 30 to 40 minutes, or until crust is golden brown and filling is bubbling.
6 to 8 portions.
Substitute the raspberries with mulberries.
Mulberry Pie
INGREDIENTS
3 cups mulberries
1 1/4 cups white sugar
1/4 cup all-purpose flour
1 recipe pastry for a 9 inch double crust pie
2 tablespoons butter
1 tablespoon milk
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
In a large bowl, mix berries with sugar and flour. Place mixture into bottom pie crust. Dot with butter and then cover with top pie crust. Crimp edges, cut slits in upper crust, and brush with milk. Let pie rest in refrigerator for 30 minutes.
Bake pie in preheated oven for 15 minutes. Lower oven temperature to 350 degrees F (175 degrees C) and bake for an additional 30 minutes. Remove pie from oven and let sit on wire rack until cool.
