Get that cake mix out and instead of water use that coconut milk. Add the drained pineapple to it and bake it. If you have some sour cream add it to the mix also before you bake. It will be so moist. That is a Paule Dean secret. Once you do it you will add sour cream to every one you bake!

With some butter and sugar and the juice of the pineapple that you drained you can put it in a saucepan and let it cook down some and make a sauce to pour over the cake when it comes out!

Just make a pineapple upside down cake.

Melt butter, enough to pour 1/2 centimetre or so deep, in the bottom of the pan. Sprinkle brown sugar all over the butter (you can use white - if you have it, mix it with a little maple syrup or honey, or you can caramelize the sugar a bit beforehand in a pot or by popping the pan into the oven for 10 minutes at 350 degrees). For an 8 by 8 pan, I usually use a generous quarter cup of sugar.

Let the pan cool down if you caramelize the sugar in the oven. Then arrange the pineapple bits on the pan, in the sugar, in a pretty design. Mix up your yellow butter cake and pour it in. Follow the baking instructions. Let it cool down, then take it out of the pan so the pineapple design sits on the top of the cake.

I've made upside down cake plenty of times this way, and it's always delicious. If in doubt, add more sugar and butter.
