SWEET POTATO CASSEROLE

3 cups sweet potatoes, cooked and mashed
1 cup sugar
2 eggs
1/2 cup evaporated milk
1 tsp. vanilla
pinch of salt
1/3 cup butter

TOPPING:

1/3 cup flour
1 cup brown sugar
1 cup flaked coconut
1 cup chopped pecans
1/3 cup butter, melted

Combine all above ingredients until smooth. Pour into 2 qt. casserole dish. Mix all topping ingredients and spread over sweet potato mixture.

Bake at 350 degrees for 35 to 40 minutes.

a nice sweet potato, sprayed with cooking spray, baked off till its tender and then cut open and butter, sugar, cinnamon put inside...very tasty

brushed with egg whites and cut into sweet potato fries and baked or omit the egg white and deep fried.

I had these on Grand Cayman. Never had baked, cubed, sweet potatoes, but they were YUMMY!

Sweet Potato Cubes

2 large sweet potatoes
1 tbsp. canola oil
1 tbsp. pepper
1 tsp. red pepper flakes
1 tsp. cinnamon
1 tsp. ginger
1 tsp. nutmeg

Preheat oven to 475F. Cut sweet potatoes into 1/2 inch cubes. In a large bowl, combine all ingredients. Bake about 30-40 minutes, flipping cubes once or until sweet potatoes are soft Tip: turn the broiler on high the last few minutes to make them a little crispy on the edges.

i dont know i love them too but i dont know how i like them its how ever my mom makes them lol.

Here's how I like to fix them:

Bake three large sweet potatoes, and when they're soft, mash them with milk and butter. Keep the consistency fairly thick, as if you were making regular mashed potatoes.

Add two well-beaten eggs, then season the puree with cinnamon, brown sugar, and a pinch of salt to taste. Place it in a casserole dish and top it with some chopped pecans.

Bake the sweet potato mixture at 350 degrees until it's set in the middle (abput 45 minutes or so), then serve with cream or whipped cream. Good stuff!
