Italian Chicken what side?!


Question: I'm making what I call EDC for dinner (easy delicious chicken) what should I make for a side? The chicken consists of italian chicken, provalone cheese, and bread crumbs. I don't want plain old rice. Also if it could transport easy that would be great as I'm taking some to my mother's for her dinner.

You need some veggies: broccoli or broccoli rabe with garlic. Or even a salad, garlic bread... or panzanella!

Steamed vegetables or oven roasted.

mash is good to re-heat and easy to transport with some veggies

Orzo. Add in some grape tomatoes and parsley. Steamed veggies too!

BAKED PASTA IN WHITE SAUCE

Pasta al forno in bianco
Preparation - Medium
Serves 4 - 6

For the sauce

2 T unsalted butter
3 T flour
1/8 t nutmeg
salt and freshly ground white pepper
2 cups milk heated

For the pasta

1 cup grated cheese: Parmesan, Pecorino, Cheddar, BelPaese, Swiss
7 oz cooked ham, chopped
1/4 cup butter
salt and pepper
l4 oz short pasta (penne, ditali, maccheroni, ziti, mostaccioli, etc)

FOR THE SAUCE:

HEAT milk the milk in a saucepan or in the microwave and keep hot.

MELT the butter in a saucepan over very low heat till liquified and just bubbling.

REMOVE from heat making sure butter does not turn brown or burn.

ADD the 1 T of flour to the butter, stirring constantly with a wooden spoon till smooth - then slowly add the rest of the flour and stir till smooth.

RETURN to medium heat and add 1/4 cup of milk at a time. When milk is absorbed by the butter-flour mixture, add a little more increasing quantities as you go along.

ADD nutmeg, salt and pepper to taste and continue stirring with the sauce at a slow bubble till sauce has the consistency of heavy cream.

REMOVE from heat and keep warm until ready to use.

FOR THE PASTA:

PREHEAT oven to 400 degrees F. with baking rack 1/3 - 1/2 up from bottom.

COOK the pasta in about 6 quarts of boiling, salted water (about ten minutes).

RETURN the sauce to low heat and add the grated cheese, stirring until cheese is absorbed into the sauce.

DRAIN the pasta, pour out the pasta water, return the pasta to the pot. Pour in three-quarters of the sauce and mix it together very thoroughly. Add the chopped ham and mix again.

GREASE a large ovenproof dish with half the butter (or a t of olive oil), pour in the pasta, distributing it evenly in the dish. Pour over the remaining sauce and dot the top with butter.

BAKE in a preheated 400 oven for 20 minutes until bubbling and golden on top. Remove, rest for 5 minutes and then serve.

garlic bread and salad or pasta

Make your EDC into a Baked Chicken Parmesan Casserole.

Par-cook your chicken with your normal method. Boil your favorite pasta and combine with your favorite sauce. If you want, combine ricotta cheese, basil, and/or Parmesan into pasta and sauce for added flavor. Add pasta and extras into a casserole, place chicken over the top. Top with a drizzle of extra virgin olive oil, extra sauce, then Parmesan cheese, and then provolone/mozzerella. Cook on 350 for 15-20 minutes until cheese is melty and chicken is cooked through. Broil for desired brownness.

Garlic bread is always a winner.. i like salad but also how about some over roasted potatoes .. cube em and put in a bag tossed with italian seasonings ---roast in oven mmMMmMMmMM

When I make Italian chicken I use Italian dressing and mushrooms and bake it in the oven. Then for my sides I usually have a baked potato and either broccoli or broccoli casserole or a salad and garlic bread--some kind of a starch and a veggie

Mashed potatoes and garlic bread and a salad.

I make that stuff all the time... I usually just serve it with a side of spaghetti noodles and some bread. Since the chicken is so rich, it is best to have a plainer side dish in MHO.
