How to make caramel for Carmel apples ??!
Answers: Does anyone have a good recipe for making the carmel using a sugar substitute ? I love to make and eat carmel apples for Halloween but, I have been recently diagnosed with type 2 diabetes. Is there a way for me to make them so that I can have one too???
This was all I could find. Doesn't sound easy, but may be worth it. If I can find all the ingredients I will give it a try too. I live in the middle of nowhere and may not have easy access to some of this, but I will see.
6 medium-sized tart apples - (Granny Smith or Jonathans are best)
6 craft sticks (I prefer to use the fat craft sticks available at craft stores because they are sturdier)
2 cups heavy whipping cream
2 cups Brown Maltitol
1 cup Sugar-free Vanilla Syrup
1 cup pecans finely chopped
Makes 6 Servings
Remove any stems, wash, dry and chill the apples the day before.
When ready, line a cookie sheet with waxed or parchment paper and push the craft sticks into the center of each apple. Put the pecans nearby in a shallow bowl.
Mix together cream, Brown Maltitol, and Vanilla Syrup, in a heavy 2 quart pot, stirring often and cook on medium heat to 240° or softball stage. This volume can take up to 20-25 minutes to reach this temperature so you must be patient. It will reduce down by half and begin to thicken.
Leave in the pot but turn off the heat. Place each apple in the center of the pot and using a long handled wooden spoon scoop up the caramel to coat the apple while turning it with the stick. Be careful this mixture can burn. When coated, lift up the apple and let the excess drip off for a few seconds. Immediately dip the bottom of the coated apple in the pecans and transfer to the parchment paper. Repeat until all six apples are coated.

Caramel Apples:

26 caramels
2 tablespoons water
4 medium apples, cubed
3 tablespoons chopped pecans
Mix caramels and water,.
Melt over low heat, stirring constantly.
Place apples in 4 small dishes.
Top each with warm caramel and sprinkle with nuts.

Ingredients:
2 packages (14 oz. size) caramels
1/4 cup water
8 apples
8 sticks
***Optional Add-Ons***
nuts
candy coated milk chocolate pieces
mini chocolate chips
candy decorations
Directions:
In crock pot, combine caramels and water. Cover and cook on high for 1 to 1 1/2 hours, stirring frequently.
Wash and dry apples. Insert stick into stem end of each apple. Turn control on low. Dip apple into hot caramel and turn to coat entire surface. Holding apple above pot, scrape off excess caramel from bottom apple.
Place on greased wax paper to cool. Once the carmel has set you may wish to roll the apples in the toppings of your choice.

microwave-safe bowls
chocolates (optional)
baking sheets
14-oz. bag caramels
4 popsicle sticks
Steps
Step One Buy good, firm apples such as Granny Smith.
Step Two Wash apples, remove stems and dry with a kitchen towel.
Step Three Push one stick into the center of each apple. Push into the top of the apple, where the stem would be. Set apples aside.
Step Four Unwrap caramels and place with the water in a large microwaveable bowl.
Step Five Microwave on High until caramels are melted, stirring every minute.
Step Six Remove caramel mixture from microwave.
Step Seven Click to enlargeHold each apple by the stick and dip into hot caramel sauce, turning to coat. Let excess drip back into pan. Scrape caramel off the bottom of the apple with a knife, or use the edge of the bowl.
Step Eight Click to enlargePlace coated apples on a greased baking sheet and put in refrigerator for 15 minutes or more, until caramel is set.
Step Nine Store caramel apples in the refrigerator.
Tips & Warnings
While the caramel is still warm, roll the apple in nuts or make a candy face.
After the caramel has set, drizzle the apple with melted chocolate for a special treat.
Apples will keep for about two weeks in the refrigerator.
