3 cups tomato sauce
1 1/4 cups flavored croutons
1/3 cup grated Parmesan
2 eggs
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh oregano
1 teaspoon finely chopped rosemary
1 teaspoon finely chopped thyme
1 clove garlic
1 pound flank steak, pounded to 1/4-inch thick
Olive oil, for brushing
Salt and pepper
Vegetable oil, for searing
Preheat the oven to 350 degrees F. Place the tomato sauce in a 9 by 13-inch baking dish and place in the oven to heat.
In a the bowl of a food processor mix the croutons, cheese, eggs, herbs and garlic until it forms a paste.
Brush the pounded flank steak with the olive oil and season generously with the salt and pepper. Spread the filling evenly over the meat. Roll tightly and tie with butcher's twine.
In a large sauté pan heat 1 to 2 tablespoons of vegetable oil and sear all sides of the rolled meat. Remove from the pan.
Add to the hot tomato sauce, cover with a tin foil tent so that the foil is not touching the meat. Braise for 35 minutes or, up to 3 hours.

Homeade onion soup!! So easy, saute 4 cups of onions and 3tbs for 30 minutes until soft in olive oil and butter. Mix in 3 tbs of sugar and 3 tbs of flour. Stir in 5 cups of beef broth. Add with salt and pepper. Bring to boil, reduce heat and simmer for 1 hr.
Top with crutons and with parmessian and provelone cheese, broil until hot and bubbly...so yummy!
Pasta Alfredo
INGREDIENTS
* 3 tablespoons butter
* 8 fluid ounces heavy whipping cream
* salt to taste
* 1 pinch ground nutmeg
* 1/4 cup grated Parmesan cheese
* 1/4 cup grated Romano cheese
* 1 egg yolk
* 2 tablespoons grated Parmesan cheese
DIRECTIONS
1. Melt butter or margarine in a saucepan over medium heat. Add heavy cream, stirring constantly. Stir in salt, nutmeg, grated Parmesan cheese, and grated Romano cheese. Stir constantly until melted, then mix in egg yolk. Simmer over medium low heat for 3 to 5 minutes. Garnish with additional grated Parmesan cheese, if desired.

Nothings better on a cold winter night than a big ole bowl of slow cooked pinto beans simmered with ham or fatback......Serve with sliced onions, chow chow & homemade buttermilk cornbread.....Yummy!!
Warm Rice Pudding
(mmmm...)
4 cups milk
1 cinnamon stick
ground cinnamon
1/4 whole nutmeg, finely grated
1/2 lemon, zested
1/2 cup short grained rice
1/3 cup sugar
4 tablespoons butter
3 egg yolks
Combine milk, cinnamon stick, nutmeg, lemon zest in saucepan. Bring to near simmer. Strain milk into bowl and discard the rest. Return milk to saucepan and add rice. Simmer mixture until rice is soft and thick (about 30 min). Stir in sugar and butter and remove from heat. Add egg yolk one by one, stirring constantly. Cook 5 minutes. Serve and top with ground cinnamon.
