How do you make cheese sauce for enchiladas?!


Question: Enchilada Cheese Sauce

Melt:

1/4 cup butter

1/4 Cup flour

1/2 Teaspoon salt

1/8 Teaspoon chili powder

1/8 Teaspoon cayenne pepper

1/4 Teaspoon paprika



Add:

2 Cups milk


Cook and stir until sauce thickens and bubbles. Blend in 6 ounces sharp process American cheese. (1 1/2 cups shredded) and hot sauce. Bake enchilada's for 25 minutes.

Enchiladas do not have cheese sauce.

Enchiladas in Spanish means "tortillas enchiladas", or "chilied tortillas" in english.

This is because the only sauce for enchiladas is Chiles. You need to make a puree of dried, reconstituted red chiles, or fresh green chiles.

Normally cheese goes inside the enchiladas, and a little on top.

However, if there is some sort of dish you have eaten that has cream sauce, and was labeled as "enchiladas", I would guess you could make a bechamel sauce and add mexican grated cheese to it after it is thickened. Easiest cheese sauce that I know of.
