we make a taco mixture and heat it up makes a lot so we make this and put it in the fridge and when we get hungry for nachos we take it out how much we want and put it n a bowl and in the microwave and heat it until it is hot and either dip our chips in it or pour it over them. then put sour cream , jalopenos if you want them, and salsa and enjoy here is our nacho cip or sauce we make
nacho dip
1 pound of hanburger
1 diced onion chopped
1 can cheddar cheese soup
1 can fiesta cheese soup
i small jar picante sauce
1 package taco seasoning
garlic powder, salt and pepper to taste
brown hamburger in a skillet along with the onion until onion is tender and the hamburger is done, drain and put back in the skillet
put the soups , jar of picante sauce and taco seasoning in and stir until hot
add garlic powder salt and pepper to taste.
store in covered dish in the refrigerator and when you want nachos take out what you need and heat it and pour over nacho chips .
if you want it stringy add some mexican shredded cheese. and stir it in . very good we have used this as nachos at work and everyone loves them i never bring any home from our pot luck dinners

Try your basic chedder.

jalapenos. meat. sour cream. chives. nacho cheese

jalapenos
diced cooked meat: chicken, pork, beef, shrimp, tuna, anything
sliced black olives
dollops of thick salsa
dollops of sour cream
piles of guacamole'
diced Ortega chilies
enchilada sauce
cheeses: quesco fresco (Mexican soft cheese), Cheddars, Monterrey Jack, fontina, and pepper Jack.

Mexican Nachos, have pieces of steak with nacho cheese .....which is really good !!!

Nacho chips are a blank canvas!
You can put almost anything!

Cheese (any kind you like but cheddar, monterey jack and mexican blends are popular)
Salsa
Tomatoes
Jalepenos
Chicken
Pulled pork
Chili
Sour Cream
Beans
Corn

The possibilities are endless........

My personal favorites are with pulled bbq pork and most of the above mentioned items!

Sometimes I use a basic bolognaise sauce, and add cheese (mozarrella works well), and some sour cream and guacomale, or just mashed avocado.

enjoy! I feel like nachos now too!

Olives, pepperchinis, lettuce, tomatos....now I'm hungry!

you can put almost anything on nachos, onions, taco meat, browned ground beef, chicken, shrimp, peppers, black olives, jalapenos, beans, refried beans, avocado, tomato, salsa, taco sauce, chiles.......mmmmm this is making me hungry too!

Any cheese you like-seasoned meat of any type-beans-guacamole-green onions-tomatoes-salsa-sour cream-shredded lettuce-jalapenos-green chiles

Minced beef in a tomato sauce with Jalepenos. Mozzerella.
Sour cream and guacamole

The quesadilla cheese, jalapeno peppers, and sour cream. If you feel like it taco meat. Brown ground beef and use taco seasoning. Salsa or picante' sauce will top it off. That's loaded nachos !

You can use any or all of the following;

Cheese (anykind you perfer)
Beans (refried beans, black beans)
Meat (steak, ground beef, chicken)
Jalpenos (green, red, or yellow peppers)
Vegetables (lettuce, onion, tomatoes)
Salsa (homemade, store bought)

I LOVE nachos! ;]

My favorite kind of nachos are BBQ Chicken Nachos. Just cook some chicken and shred it into small pieces. Mix the chicken with BBQ sauce (I prefer one that's not too spicy, remember you'll be eating this stuff straight) you want more sauce than is necessary to coat the chicken but not too much. Lay out some nachos on a plate (one that can go into the oven or a pan) and top with chicken mixture. Then just grate some cheese on top and pop the whole thing under the broiler for a few minutes. Make sure to watch it very carefully as it can very easily burn. It's a great way to get rid of leftover chicken.

Of course you can just use BBQ sauce and cheese without the chicken, as a friend I introduced this recipe to said "I'm never making nachos without BBQ sauce again!"

Black olives, onions, mushrooms, green peppers, seasoned ground beef, jalapenos, re-fried beans or chili. Topped with Pace picante sauce.

Something different I do is mix a package of taco seasoning and sour cream. This is a great dip for nachos or chips. You can even top it with salsa and chedder cheese if you like. There are a lot of great suggestions on here, you should be able to find something. Good Luck!

There are so many options...you are only limited by your own imagination!!

Cheese
Mexican Style cheese blend
Cheddar-Normally, I am a sharp cheddar FIEND, however
good sharp cheddars tend to get very oily when they're
melted-which, can make your tortilla chips soggy,
so I would only use cheddar in moderation in
conjunction with the cheese blend if you can't do without it.

Ground beef
Ground chicken
Marinated, pulled chicken
Marinated, pulled pork

Diced/sliced Jalapeno
Thinly sliced red onion/shallot/scallion
Caramelized red onion/yellow onion/shallot
Diced/sliced sweet red/green/yellow pepper
Seeded, Diced Tomato
Shredded Iceberg lettuce
Whole/sliced black olive

Guacamole
Salsa
Picante Sauce
Hot (cayenne/tabasco) sauce
Sour Cream

Hope this helps. Happy cooking.
