Bombay Pork Skillet
4 boneless pork chops, cut into 3/4-inch cubes
2 teaspoons ground cumin
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
1 teaspoon ground coriander
1 teaspoon ground mace
1/2 teaspoon ground black pepper
1/4 teaspoon salt
1 tablespoon vegetable oil
2 large onions, chopped
3 cloves garlic, crushed
3/4 cup beef broth
3 tablespoons honey
2 tablespoons lemon juice
1 cup plain yogurt
2 tablespoons all-purpose flour
1/4 cup chopped parsley
Hot cooked rice for accompaniment
Chopped cashews for garnish
Chopped fresh cilantro for garnish
Put cumin, cardamom, cinnamon, coriander, mace, pepper and salt in large plastic bag; shake to blend. Add pork pieces, shake gently to coat pork.
Heat oil over medium-high heat in large skillet; cook and stir onions and garlic until tender. Add pork, cook and stir for 2 to 3 minutes or until browned.
Stir in broth, honey and lemon juice, bring to a boil; reduce hat, cover and simmer 10 minutes or until pork is tender.
In small bowl stir together yogurt and flour; stir into skillet with parsley. Cook and stir over medium heat, until mixture thickens.
Spoon pork mixture over hot cooked rice, garnish with chopped cashews and chopped fresh cilantro.
Makes 4 servings.
This time of year is perfect for casseroles and stews. A hearty beef stew with plenty of veggies in it warms the heart and soul.
a curry.....
soup. no, JK! how bout chili, meat loaf, turkey and mashed potatoes, stuffed green peppers, pot roast, fried chicken, some kind of casserole-tuna maybe!
Poppy seed Chicken
5 to 6 chicken breasts
8 oz. sour cream
1 can of cream of chicken soup
1 sleeve of ritz crackers
1/2 - 1 stick of butter melted
poppy seeds (enough to cover casserole)
boil chicken (I add garlic, onions and chicken broth to the water for flavor)
Once chicken is boiled shred it. If you boil chicken the day before, shred it and then put it in a baking dish, cover it with the broth you boiled it in, and cover with plastic in the refrigerator over night.
In a bowl, mix the chicken, sour cream and cream of chicken. Add some of the juice from the broth to make more creamy if desired. Once mixed, pour mixture into a greased 9x13 pan.
Crush crackers and sprinkle over mixture with poppy seeds and then pour butter over the crackers.
Bake @350 degrees for about 30 -40 minutes or until golden and bubbly.
Serve on top of rice.
Let me preface this with -I hate pancakes-. All except my grandma's recipe for "yogurt pancakes." I don't know what is so magical about these pancakes, but I wolf down like 18 in one sitting. It's also really easy. Just two cups Bisquick, 2 cups plain yogurt, and 5 or 6 eggs. Just whip it up in the blender and you will have the most fantastic things you will ever put in your mouth. Good luck :)
Make some "spaghetti alle Vongole" " Spaghetti with clam sauce" add some red hot pepper to the sauce!
I made something pretty yummy last night.
Spaghetti and chicken/cheese meatballs. I made it up but will give you aprox recipe and measurements.
Mix together
1lb ground chicken (use turkey or beef or whatever you have/like)
1/2 c italian bread crumbs (maybe less for beef as it is sturdier)
1 egg
1 tbls italian seasoning
dice a small block of cheddar cheese into about 1/2 cubes (I used the bagged kind that is precubed leftover from party )
wrap the meatball mixture around the cheese making about 1 1/2-2 inch meatballs.
Heat about 1 tbls olive oil in frying pan and drop meatballs carefully in oil. turn as needed until balls are browned, then cover and turn on med low heat.
I made homemade spaghetti sauce but you could just open a jar and dump the sauce over the meatballs. I then let the meatballs and sauce simmer about 15 minutes while I boiled a pot of spaghetti.
Serve meatballs and sauce over spaghetti with parm cheese.
You could use any kind of cheese. When you cut open the big meatballs the cheese is all melted inside. Very good, would be better with mozzarella I bet.
This is a good, quick and easy recipe. It is a bit spicy but you can make it with green chili salsa and it will not be so spicy. It is a casserole so it is soul-warming at the same time.
Chilaquiles
1 can (10 ? oz) condensed cream of chicken soup
? cup green jalape?o salsa
1 can (4 oz) diced green chilies, undrained
8 cups of taco chips
2 to 3 cups of shredded cooked turkey or chicken
2 cups of shredded cheddar cheese
Preheat oven to 350? F. Combine soup and salsa in medium bowl; stir in green chilies. Place a third of chips in 2- to 2 ?-quart casserole; top with a third of meat. Spread a third of soup mixture over meat; sprinkle with a third of cheese. Repeat layering. Bake, uncovered, until heated through about 20 to 25 minutes, garnish with black olives and cilantro.
