If your egg whites come to a peak that doesn't fall they are stiff... fall like a soft serve ice cream. If they do fall it is called soft which some recipes calls for.

A hint on whipping egg whites, the beat much better at room temperature.

when you are whipping lift the mixer and if there are stiff peaks then it is done.

You whip them until they from peaks, if you can take the mixer blades and form peaks with them they are whipped well. kinda like when you make meringue.

Have no clue

When you beat the egg whites they will begin to get fluffy (most likely you will need an eletric hand mixer) they will start to stiffin up and when you move the beaters away they will leave little peaks if you go much beyond that they get too much air and start to dry out.

Beat them with an electric mixer until you can take the mixer out of the bowl and the whites stay in a point and not fall down.
If you beat them too long they will dry out.
It is really kind of dumb because once you get to the dry phase you can't go back.
