Can someone please tell me how to make GREAT homemade hashbrowns that don't turn out greasy/soggy?!

Question: Same thing happens with potato pancakes. Greasy/soggy. Instead of browning evenly all over they tend to burn, even with a low flame.

very simple. After grating, or shredding potatoes, rinse them under cold water and dry thoroughly on a clean towel. Heat skillet, iron preferably, over medium high heat until quite hot and add clean oil, enough to leave a thin layer across the bottom of the skillet. Place a couple of heaping spoonfuls in skillet and let sit about 20 seconds. Scrape up and flip over, let cook another 1 minute. Add oil as needed between batches. The secret is to rinse the excess starch from the potatoess, enabling them to become crisp on the edges, instead of starchy.

pam cooking spray, or a tefflon skillit. Oh! dont pile to many hashbrowns or they could become soggy as you say. good luck.

I put them on a flat plate or cookie sheet the day before I cook them on top of paper towels in the fridge.I arrange them evenly and about 1 inch thick.I press them to get as much of the moisture that I can.I dice green, orange and red peppers as well as onion.pam sray and preheat skillet to 400 (on my skillet)wait until it is at temp and put them in the same way, flat and about an inch thick.I don't toss and stir, just cut and flip until golden brown on both sides.everyone loves mine, good luck and I hope this helps

the flame needs to be at medium and you should only use about 2tbs of oil in the pan. they should only be turned once and it should only take about 7 min per side (for extra crispy)

Usually if the pan is not hot enough, the food will absorb the grease. The trick is to have the potatoes at room temp, use a skillet that is already well-heated, and don't put too many potatoes in at one time, since that will reduce the heat quickly.

HTH : )

Boil your potatoes the night before, grade the potato on a large area so that they can dry just a little, hash brown should be about 3/8 inch thick. temp should be 300 degrees. you can use a spray or real light oil or butter.Cook for 7minutes turn over cook for 5minutes
