. CHEESEBURGER SOUP
1/2 pound ground beef
3/4 cups chopped onion 3/4 cup shredded carrots and
3/4 cups, diced celery
1 tsp. dried basil
1 tsp. dried parsley flakes
4 tbsp. butter or margarine divided
3 c. chicken broth
4 c. diced peeled potatoes
1/4 cup all-purpose flour
8 ounces processed American cheese, cubed 2 c.
1 1/2 cup milk
3/4 teaspoon salt
1/4 to 1/2 teaspoon pepper and
1/4 cup sour cream

In a 3 qt. saucepan, brown beef; drain and set aside. In the same saucepan, saute onions, carrots, celery, basil and parsley in1 tbsp. butter until vegetables are tender, about 10 minutes. Add broth, potatoes and beef; bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender. Meanwhile, in a small skillet melt remaining butter. Add flour; cook and stir for 3-5 minutes or until bubbly. Add to soup; bring to a boil. Cook and stir for 2 minutes. Reduce heat to low. Add cheese, milk, salt and pepper; cook and stir until cheese melts. Remove from heat; bring in sour cream. Yields 8 servings( 2 1/4 quarts)


Pumpkin pie cake


1 can pumpkin (29 oz)
4 eggs
1 can evaporated milk (12 oz)
1 1/2 cup sugar
2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1 package yellow cake mix
1 c. melted margarine
1 c. chopped nuts
Direction
beat all ingredients except cake mix, margarine and nuts.
Pour in a 9 x 13 pan sprinkle dry cake mix over pumpkin mixture. Pour melted margarine over cake mix and sprinkle with chopped nuts
Bake at 350 degrees for 1 hour no longer. Top with whipped cream if desired.


CREAM OF MUSHROOM SOUP

INGREDIENTS

3 tablespoons butter or margarine
3 tablespoons all-purpose flour
? tea salt
Dash white pepper
3 cups light cream or milk( I use evaporated milk)
1 can (10 ? oz) condensed beef broth undiluted( I use 1beef bouillon cube 10 ? oz water)
1 can water
? teaspoon onion powder
? teaspoon basil
1 small bay leaf
1 pound fresh mushrooms, cleaned and coarsely chopped

METHOD
Melt butter in large saucepan. Blend in flour. Cook and stir over low heat 1 minute. Remove from heat. Stir in salt and pepper. Slowly stir in cream so mixture remains smooth. Heat and stir over medium heat until thickened. Meanwhile, combine remaining ingredients in medium-size saucepan. Simmer, covered, 10 minutes or until mushrooms are tender. Slowly stir

I've made this a couple times, very very good (see where it came from).

Pasta Primavera

3 carrots, peeled and cut into thin strips
2 medium zucchini or 1 large zucchini, cut into thin strips
2 yellow squash, cut into thin strips
1 onion, thinly sliced
1 yellow bell pepper, cut into thin strips
1 red bell pepper, cut into thin strips
1/4 cup olive oil
Kosher salt and freshly ground black pepper
1 tablespoon dried Italian seasoning
1 pound farfalle (bowtie pasta)
2 Tablespoons minced garlic
15 cherry tomatoes, halved
1/2 cup grated Parmesan

Preheat the oven to 450 degrees F.
In a very large bowl toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Transfer the vegetable mixture to 2 heavy large baking sheets and arrange evenly. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total.
Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes, or to package directions. Drain, reserving 1 cup of the cooking liquid.
Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste. Sprinkle with the Parmesan and serve immediately.

here is something i have been on a kick lately cranberry juice, 2 TBL froze oj or lime concentrate 6 ice cubes and blend till still has a few ice slivers in it

Raspberry or orange sherbert and 7-up is sooo delicious.

Kentucky Pie

1 cup sugar
1/2 cup flour
1 teaspoon vanilla
2 eggs
1 cup chocolate chips
1 cup chopped nuts
1 stick melted margarine
Mix flour, sugar; add eggs; add butter, nuts, chocolate chips, and vnilla. Pour into unbaked pie shell. Bake at 350 for 35 minutes. Cool 2 hours

HO HO Bars

1 chocolate cake mix- bake as directed

Filling: Mix 1 1/2 cups milk and 5 tablespoons flour- cook until thickened. Cool.

Beat till creamy:
1 cup sugar
1 cup Crisco shortening
1/2 cup butter
1 teaspoon vanilla
Add cooled flour and milk mixture . Beat 8 minutes

Split cake in half and spread filling inbetween layers. Refrigerate 1 hour and frost.

Frosting:

1 cup sugar
1 cup brown sugar
1/2 cup milk
1 cup butter.
Boil 2 minutes. Add 1 cup chocolate chips and 1 teaspoon vanilla. Beat well. Pour over top layer of cake. Refrigerate.
