Falafel rolls (on Lebanese bread), hommus and Tabbouleh?!
I can make the falafel using prepared stuff from the supermarket..just add water and deep fry.
How do you make Tabbouleh? (I've got a lemon tree and parsley growing)

Answers: Ok... So the guy down the road from here makes magnificent falafel rolls. I'm addicted.. expecially with chilli sauce. YUM!

How do you make hommus?
Soak some buckwheat in water for 1/2 hour. In the meantime chop 2 bunches of parsley, 1/2 bunch of mint and about 8 shallots.
Dice 6 large tomatoes with seeds removed. Mix it all together, add buckwheat, juice of 4 lemons, 1/4 cup of olive oil and lots of salt and pepper.
For my hummus I use the following: Process 1 can of chickpeas,2 cloves of garlic, 2 tbs of sour cream, 2 tbs of lemon juice and 1 tsp if ground cumin in a blender until smooth. Add some salt and pepper.

I learned to make hummus from a lebanese friend.
Mash ful midammis (spelled differently everywhere)...they are small fava beans in a can.
Mash a can of those...if you can't find them, use a can of garbanzos, but it doesn't taste exactly the same.
Add a clove of garlic, mashed, and some salt. Now stir in some tahini. Don't use too much. Maybe a couple heaping tablespoons for a regular can of beans....
Now add fresh lemon juice, and stir, stir...and stir some more.....keep on stirring. Did I forget to tell you to stir?
Eat with fresh onion slices or slices of pickled turnip (you can get it in middle eastern stores...they have bright bright pink edges), and warm pita bread.
I've never made any of it before, but I absolutely love it! Vegetarian food and wonderful!!!

I have NO idea how to make them...I haven't extended my cooking skills that far yet, but man...those things are to die for!!
I had a Lebanese friend at TAFE, and I loved it when she shared her food. Dang, now I'm getting hungry. I'll see if I can find you some recipes...I'll be back in a jiffy

Edit:I just made it for dinner and found something else that goes with it too - avacado blended with a little mayo or sour cream to make a paste/dip.
