Parmesan-Crusted Chicken Breast

Ingredients:

* 3/4 cup finely chopped fresh Italian parsley (or 1/4 cup dried parsley flakes)
* 2/3 cup plain (or Italian) dried breadcrumbs
* 1/2 cup shredded Parmesan cheese
* 1/2 teaspoon ground pepper
* 1 tablespoon finely chopped lemon zest
* 4 skinless and boneless chicken breasts
* Canola or olive oil cooking spray

Preparation:

1. Preheat oven to 450 degrees. Cover a 9 x 13-inch baking pan with foil; coat the foil with canola cooking spray.
2. Add parsley, breadcrumbs, Parmesan, pepper, and lemon zest to medium bowl and blend well.
3. Press both sides of each chicken breast in breadcrumb mixture, and place in prepared pan. Coat the top of each crusted breast lightly with cooking spray.
4. Bake until the chicken is completely cooked through, and the tops and bottoms are lightly browned (about 25 minutes).

Yeah, fajitas. These are well yum or chicken breasts wrapper around asparagus then grilled with bacon and cheese on top.

Yeah shove an opened beer can into a chicken, cook and serve. I think he'll either love it or be disgusted depending on who he is.

so does my boyfriend....we always have chicken with rice, plum sauce is good, barbeque, or fry onion garlic few other things add some bacon and add cream,herbs etc and its so yummy

Red Spicy Chicken

1 cup yogurt
2.75 ounces tomato paste (1/2 small tin)
1 teaspoon salt
? teaspoon red chile powder (or to taste)
2 tablespoons sweet Hungarian paprika
? teaspoon crushed black pepper
1 teaspoon crushed fennel seeds

1 tablespoon olive oil
4-6 skinless, boneless chicken thighs
2 ginger-garlic cubes

Mix the yogurt and tomato paste until it is evenly one coloured. Mix in the spices.

You may leave the chicken pieces whole, or cut them up smaller. In either case, sauté them in the oil until lightly browned.

Add the thawed ginger-garlic purée, and mix in well.

Add the yogurt sauce mixture and reduce the heat. Continue simmering the chicken, stirring frequently, for about 20 minutes, until the sauce thickens and coats the chicken. It will seem curdled at first, but it will re-solidify as it cooks.

Serve over steamed rice, with a steamed green vegetable on the side.

Chicken with Tomatoes and Spanish Onions.
Lightly coat the chicken pieces in flour and fry in good Olive Oil, approx 2 table spoons. Once browned. Remove from heat, place in an oven dish. Fry off the sliced onion really slow until softened Transfer to oven dish with the Chicken, Sprinkle Table spoon of, Basil, and oregano. then add 2 chopped cloves of Garlic,salt and pepper. Now In the same pan you cooked the chicken, put 1 can approx 425 grams of Peeled or .diced Italian tomatoes stir around making sure to scrap the bottom for any left over flour (as a thickener) and when it is just about to bubble, add half a cup 125grams of red wine, and half a cup of chicken stock Mixing well, transfer to the oven dish cover and bake in moderate oven for approx 1 hr.
Serve with Steamed Rice/steamed veggies or Sliced Baked potatoes and Fresh Green beans. Enjoy..:-) Oh PS, if he likes chillies, finely chop and add at the same time as wine & stock.
