How do you cook your fennel (fenchel)?!

Roast it with a joint of lamb

Slice it lengthways and grill them with some salt.

Then, grill a nice tuna steak with some seasoned new potatoes et voila!

Try a nice fresh tomato salsa with it.

Gosh, I loved this when my mum's friend made it for us at hers.

It was the first and last time I ate fennel and loved it!!!

4 big fennel bulbs (cut in 4's)
1 egg
20 grams butter
1 cup of milk
salt
Half cup grated Swiss
abt a table spoon of white flour

Cut in quarters and boil in salted water til "al dente" (abt 15 mins.).
Drain and fry in abt 5 grams of butter for about 7 mins.... Mix the flour with some milk and pour over the fennel and mix well.
Turn off and let cool.
Beat the egg, mix with the cheese. Place all in a buttered oven dish and put pieces of the butter all over the top.
Bake at 180°C for abt 25mins.

Another version is to sprinkle more cheese mixed with seasoned bread crumbs before taking it out of the oven and but it under the broiler to form a nice and golden crust on top.

I julienne slice it along with onions and serve it as a base for grilled salmon. Or pan fried fish in butter. It accompanies fish very well.
