I would suggest a skirt steak as the best candidate for marination. It is inexpensive and very tasty. Understand what marinating meat does is use enzymes to break down the connective tissue. Tender cuts of meat do not need any marinating.

I would suggest using a red wine vinegar in combination with wine for a marinade. Here is a quick red win marinade:

1 c. dry red wine (I suggest Cabernet Sauvignon)
2 tbsp. red wine vinegar
2 cloves garlic, pressed
1 tsp. oregano
2 tbsp. vegetable oil
1/4 c. Worcestershire sauce
1/4 c. soy sauce
1/2 c. Italian dressing

Combine all ingredients and mix well. Pour over steak and refrigerate for 1 hour, turning at least once before grilling.

The more robust wines like shiraz are probably best for beef. Really you need to think about marinading in spices rather than wine as it evaporates.

But as a chef its very important you taste the wine before during and after marination, a glassfull each time should do. Best buy a couple of bottles, you'll save money in the long run. You'll get hot and thirsty in the kitchen.

how about drinking the wine and just roasting the beef, thats what i do, im no expert but normally when u marinate something you leave the thing u are marinating which in your case is beef in the wine for a few hours or over night, then remove it from the marinade and roast it.

a really sweet rich wine and any tender joint of beef - use half a bottle of wine, place meat into it, turn over after 1 hour or if have any spare time leave it for longer, turn over and if you have no wine left in the bowl add more to it.

silverside is great.Any red wine will do I think it works as a tenderiser to the meat.I usually use red wine vinegar if I dont have wine.Slow cook (low temp few hours)a "tough" cut of meat in red wine.Yum!

hi why go beef when lamdb is cheaper and with lamb you can cook it for a long time and it would be realy tender . get 1 leg of lamb sliced onion and 12 tins of tomatoes put in dish cook in a slow oven for around 7 to 8 hrs yum yum
