I've been growing some Mariachi peppers and i've got a bunch any good recipies?!
Answers: i'd like some recipies I hear they're a good pepper so if you could give me a recipie like in a sauce or a dip or salsa or really anything
this one?..
Mariachi Fajitas
2 eggs
15 mL (1 tbsp) water
5 mL (1 tsp) tex-mex seasoning
cooking spray
? red or green pepper, small, cut into strips
2 green onions, sliced (including green tops)
2 flour tortillas, large (20 cm / 8-inch), warmed
30 mL (2 tbsp) fat free sour cream
30 mL (2 tbsp) low-fat cheddar cheese, shredded
30 mL (2 tbsp) chunky salsa
Beat eggs with water and seasoning. Set aside. Spray a 20 cm (8-inch) non-stick skillet with cooking spray. Heat skillet over medium heat. Sauté peppers for 3 minutes. Add green onions and sauté for 2 more minutes or until peppers are tender-crisp. Wipe the skillet clean. Spray the same skillet with cooking spray. Heat skillet over medium heat. Pour in egg mixture. As mixture sets at the edges, with spatula, gently lift cooked portion to allow uncooked egg to flow underneath. Cook until bottom and top are set. Slide onto a warm plate. Cut omelette into 1 cm (1/2-inch) strips. Place an equal amount of omelette strips, peppers and green onions on two tortillas. Garnish with an equal amount of sour cream, cheese and salsa. Fold each side of the tortillas over filling and serve immediately.
Makes: 1 serving.
Preparation: 7 minutes. Cooking: 8 minutes.
Fresh Salsa
4 large tomatoes, ripe
6 large jalapeno peppers
2 large onions
1 green bell pepper
5 cloves garlic
2 teaspoons cilantro
1 tablespoon salt
2 tablespoons sugar
Using a blender or food processor, add equal amounts of each vegetable and using pulse, process just until it is still chunky.
Drain, reserving liquid.
Repeat until all vegetables have been processed.
Mix drained salsa, adding sugar, cilantro and salt. Add some of drained liquid to make it desired thickness.
If it is too spicy, add more tomatoes.
Refrigerate in glass container and use on tortilla chips, tacos, scrambled eggs, or as a relish.
Will keep for up to one week.
