Dried mushrooms are best!! they have a better flavor and they grow when you cook them!!!

Mushrooms have a very high moisture content. If you look at the dried mushrooms available in stores you can see their size without any moisture. Heating them forces the moisture out and thus they shrink. You may have found that sauteing them too long made them mushy because they then simmered in their own juice and not just the butter added to saute them.
