Any dry white wine would be suitable, or sherry vinegar, but the acidity might not be what you want.

Chablis (dry white wine) with a little brandy added, or even better Madeira,

Chardonnay works well as a substitute.

Well, it really depends on how your recipe reads. I don't know what you're making, but I would imagine that any type of wine could be used. Each different wine would give it's own unique flavor to what you are making. Marsala is often used with chicken and beef, so perhaps you could use that. I've even used champagne at times in recipes. Experiment a little :)

As long as it's not a focus of the dish, any wine or spirit would do. I would try a cognac/brandy or a dry white wine or vermouth

Actually you can always use chicken broth....or apple juice depending on the taste of your recipe.
