Here are some side dishes to serve with your maple salmon.

green beans with hazelnuts and lemon:
1 1/2 pds green beans
1 tbsp. olive oil
1 1/2 tsp. freshly grated lemon zest (or to taste)
1/3 cup hazelnuts (toasted and chopped golden brown)

Directions:
In a kettle of boiling salted water cook beans until just tender, 3 to 8 minutes. Drain beans in a colander and in a large bowl toss while still hot with oil, zest, nuts, and salt and pepper to taste. Beans may be made 1 day ahead and
chilled, covered. Reheat beans, preferably in a microwave.

Tropical Green Beans:
4 Tbsp. Olive oil
1 lb fresh green beans (cleaned, cut and dried)
1 small yellow onion, cut into rings
6 cloves of garlic, peeled and halved
1/2 tsp. salt
2 Tbsp Balsamic vinegar
3 stalks heart of palm, cut in 1/2" rings
1/3 cup diced sun-dried tomatoes (packed in oil)
2 tsp. toasted pine nuts
Freshly ground black pepper

Preheat oven to 400 degrees F. Brush a large baking
dish with 2 tablespoons of the olive oil. Put green
beans , onion, and garlic in dish, drizzle with
remaining oil and sprinkle with salt. Bake for 25
minutes, stirring beans at least 3 times. When tender,
remove beans from oven and transfer to bowl.
Immediately drizze with vinegar. Add hearts of palm,
tomatoes, pine nits and pepper to taste and toss.


Garlic Mashed Potatoes
7 cups peeled and cubed baking potatoes
6 cloves garlic, peeled
1/2 cup low-fat milk
1/4 cup Parmesan cheese, grated
2 tablespoons butter
1/2 teaspoon salt
1/8 teaspoon pepper
PREPARATION:
Place potatoes and garlic in a saucepan. Cover with water; bring to a boil. Reduce heat. Simmer 20 minutes; drain. Place drained potatoes and garlic in a mixing bowl. Add remaining ingredients; beat with mixer until smooth. Serves 6 to 8.

Baked Rice:
3 cups boiling chicken broth
1 1/2 teaspoons salt
1 1/2 cups long grain rice, uncooked
1/2 cup slivered almonds
3 tablespoons butter
PREPARATION:
Combine boiling broth, salt, and rice in an ungreased 2 1/2-quart casserole or baking dish. Cover tightly with foil or lid, and bake at 350° for 30 to 40 minutes or until liquid is completely absorbed and rice is tender. Meanwhile, lightly brown almonds in the butter Add almonds and butter to hot baked rice; toss to blend well, serve.

steamed asparagus or sauteed spinach with garlic

fresh long stemmed green beans with some almond slices and pimiento for color and candied yams or wild rice or squash or au gratin potatoes

First off, I want that recipe! It sounds outstanding!

Secondly, try this. While it's a pork chop recipe, just use the recipe for the apples - they're excellent!

Pork Chops with Golden Applesauce

4 Golden Delicious apples, chopped

2 teaspoons lemon juice

2 ounces golden raisins, a handful

1-inch piece fresh ginger root

3 tablespoons light brown sugar

2 cups all natural apple juice or cider, plus a splash for pan sauce

1/2 teaspoon ground cinnamon

1/4 teaspoon freshly grated nutmeg

2 tablespoons vegetable oil or olive oil, 2 turns of the pan

4 (1-inch) thick center cut boneless pork loin chops, 6 to 8 ounces each

Salt and pepper

2 tablespoons butter

Combine first 8 ingredients in a medium pot placed over medium high heat and cook until a chunky sauce forms, 10 to 12 minutes, stirring occasionally. If sauce begins to spatter as it bubbles, reduce heat back a little, but it should be allowed to reduce and form quickly. Once apples are soft and sauce forms, remove it from the heat.

Heat a large nonstick skillet over medium high heat. Add oil to the pan. Season chops on 1 side with salt and pepper. Using a pair of tongs, add chops to hot skillet seasoned side down. Season the opposite side of the chops with salt and pepper. Brown and caramelize the chops 2 minutes on each side, then reduce heat to medium and cook another 5 to 6 minutes, turning occasionally, until juices run clear. Remove chops from heat and let them rest a couple of minutes for juice to redistribute. Deglaze the pan with a splash of apple juice and 2 tablespoons of butter. Pour pan sauce over chops. Remove ginger from the sauce and top chops with generous portions of warm golden apple sauce.
