All I do (because I love salt hehe) I rince them off in water and well there still wet I use sea salt and pile it on I also use onion salt then bake them low heat for awhile

Marinate 'em in pickle juice?

1 Preheat oven to 400°F. Cut open the pumpkin and use a strong metal spoon to scoop out the insides. Separate the seeds from the stringy core. Rinse the seeds.

2 In a small saucepan, add the seeds to water, about 2 cups of water to every half cup of seeds. Add a tablespoon of salt for every cup of water. Bring to a boil. Let simmer for 10 minutes. Remove from heat and drain.

3 Spread about a tablespoon of olive oil over the bottom of a roasting pan. Spread the seeds out over the roasting pan, all in one layer. Bake on the top rack for 20 minutes or until the seeds begin to brown. When browned to your satisfaction, remove from the oven and let the pan cool on a rack.

***If you like your toasted pumpkin seeds extra-salty, soak overnight in a solution of 1/4 cup salt to 2 cups of water. Dry an additional day, then proceed as above.

I would do exactly what SwtJoy would do (in fact I think I'm going to follow her blanching in salty water technique next time I do it). In addition I would lightly season them with a little cayenne (just a little, unless you like them spicy) and some good sea salt and a drizzle of nice olive oil after they are roasted.

Try some alternatives to make them go hmm

SPICY ROASTED PUMPKIN SEEDS

3 c. pumpkin seeds
1 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. nutmeg
Salt to taste

Clean pumpkin seed and allow to dry at least 3 hours. Spray a flat non-stick cookie sheet with Pam. Spread pumpkin evenly on pan and sprinkle with seasonings. Bake at 375 degrees for 15 to 20 minutes, stirring several so seeds do not stick or burn. Watch carefully. Test with fork to see if done; when crunchy remove from oven.

I had a more savory recipe and I have misplaced it, I am bumming now I was going to do them tomorrow
I will pass along if I find it
