Does it make a difference what side of the foil you cook on?!

The bottom line answer is "no", it does not make a difference.

The reason foil has a shiny side and a "matte" side is that due to the thickness (thinness?) of foil, it is processed as a double sheet with the outer surfaces becoming shiny as they go over the rollers. When the double sheets are separated at the end of the manufacturing line, the result is a shiny side and a non-shiny side. But there is no difference in conductivity between the sides. Light may bounce off the shiny side differently, but heat is conducted identically.

I've never noticed a difference. To me it's more of an old wive's tale from my mother. So anything wrapped like a baked potato or covering a casserole it goes shiny side out. If I'm covering a baking sheet though it's shiny side up. I don't know, I just do what my mom did.

i don't see any difference. maybe your husband has a preference about his foil, some people are picky about certain things.

yes...the shiny side should be facing in so it can better cook by reflecting heat back at the food. If the shiny is facing out then the heat is reflected before it gets to the food so it takes longer to cook. Yes it is a very minor difference but still noticeable.

The Reynolds company says it doesn't make a difference, unless you are using their new foil where one side is no-stick.
