No! Pancake mix has leavening, salt, etc in it, so it will goof up your measurement in a recipe for those things.

Pancake mix not only has some sort of baking agent and salt, it also commonly has powdered milk and fat added to it. Substituting it for flour is literally a recipe for disaster.

It depends on the recipe. Pancake mix has baking powder in it and that will make things "fluff up" just like pancakes. If you are using it for a batter or coating...it should be fine. Or to dust a board (ie.rolling out dough) should be okay. But to put it IN a recipe...I wouldn't chance it. Unless your recipe requires baking powder as well. Then maybe it will be okay. Just don't add additional baking powder. Lots of luck!!
