Put a little mayonnaise in the mix to make it creamy and soft instead of dry. You can't even taste it and the cake is so soft it's like you bought it from a bakery. :)

First you have to find a good recipe for a cake. You can do this by searching a cookbook or the internet. If you really want to do it right you need to add ingredients like flour by weight....but if you don't have a scale just make sure you scoop it out and level it off...don't pack it down into the measuring cup! Another important thing to remember is not to overmix the batter...this will make the cake tough.

2 cups flour
1 1/2 tsp baking powder
4 oz butter
A little milk
1/4 cup sugar
Packet of jelly crystals

Cream butter and sugar then add the jelly crystals (whatever flavour you like) and mix well.
Add the flour and baking powder and mix again then add the milk.
Cook at 180 degrees celsius for 30 minutes.
Really easy, and you can always change flavours by using different flavour jelly crystals when you get bored of it.

yes put mayo in it--but sub 1 cup mayo for the oil

if you haven't had much expirence making cakes i would start with a box cake mix and then doctor it...add pudding mix, sour cream, etc (just google doctored box cake mixes). otherwise just find a good scratch recipe. Epicurious has a lot of great recipes, when you find one that you like, read the reviews, take the suggestions into consideration, and then go for it. Make sure you follow the instructions!!!
to help you cake bake evenly, get Bake even strips by Wilton, you wet them down, the wrap them around your pan and taadaa...also any cakes that are bigger then 10" (round, square, whatever) use a heating core, or sub a flower nail...this also help make sure you cake is baked in the center.
Another tip is that once you find a recipe you like (box or scratch) make the cake (just the cake) a day or 2 before you need it, and FREEZE it...a lot of bakers live by this(along with always adding sour cream to their recipes)....It makes the cake even more moist! you don't want a dry cake. just make sure its completly thawed before you frost it, AND leave the saran wrap AND foil on the cake as it thaws.
I beleive a good cake also has a good frosting or filling...cream cheese a good filling for cakes (not just plain old cream cheese). Not only does a cake have more flavors to it, it also looks pretty when you cut a slice and you can see that its been torted and filled with something yummy.
A good webiste to check out would be
www.Cakecentral.com (you do need a login and password (its free) but there are millions of pictures of cakes AND recipes, plus if you have any questions you can post them in the forums and someone is always willing to help you!)
Hope this helps
