Use baked potatoes for hash browns, they are awesome and brown nice - use half butter and half oil.

well you have to fry them so oil .. use oil.. it should work until they come to a crisp

What I do is I microwave the whole potato first to get them a bit soft, 2 potatoes for about 7 minutes. Then I take them out cut them into pieces. Get my frying pan nice & warm. Put butter in the pan so it starts to melt (quite a bit of butter too because the potatoes really soak it up) & then add the cut up potatoes. Let them start to cook a bit then add your spices....pepper, salt, onion powder & paprika...to taste. I like a lot of spice! MMMM!! They are delish this way!

You a veg. oil, w/ grated potatoes- if they're not browning, you need to turn up the heat. I prefer to use an electric skillet instead of an electric stove burner, the skillet keeps a more even and accurate heat, and you use less pans when cooking.

it takes time. use a skillet and let the pile sit there season with salt and pepper. check every 3 minutes or so. Then Flip when brown!

Dice or shred the potatoes.
Fry bacon in a non-stick skillet until crisp.
Remove bacon from the skillet and drain on a paper towel.
If there is too much grease, pour some of it into a measuring cup in case you need to use it later.
Add the chopped onions to the bacon grease.
Saute' on medium heat until the onions are tender and slightly brown.
Add the potatoes and mix thoroughly with the onions, using an egg spatula.
Fry the potatoes turning them over frequently for even cooking.
If potatoes start to stick to the bottom of the skillet, add more bacon grease or vegetable oil (about 1 tablespoon) Fry until potatoes are a nice golden brown.
Serve with the fried bacon

Homemade Hash Brown Potatoes
INGREDIENTS:
4 cups cold cooked potatoes, chopped
1 tablespoon minced onion
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup milk
3 tablespoons butter
PREPARATION:
Combine the potatoes, onion, salt, pepper, and milk. Melt butter in a large heavy skillet over medium heat. Do not let burn. When butter is hot, add potato mixture. Press down firmly. Reduce heat and fry slowly until bottom is golden brown.

Hash browns, my specialty, peel potatoes, not the red ones, they're better mashed, well grate them, then rinse rinse rinse in a colander, I use BUTTER to fry them.

Butter, medium high heat, and patience are the key to golden brown hash browns.

I make mine from left over baked potatoes. I chill them until ready to use, then peel and grate. I let my pan get good a warm before adding the butter, let it melt, then place my hash browns in the pan. I season the tops with salt and pepper and dot with more butter. Let cook, without turning for about 5 minutes (maybe more), gently lift one side to check for browning, and when golden turn over. Allow to cook an additional 5 minutes (maybe more), gently lifting to check for that golden brown crust.
