Autumn Pot Roast with Root Vegetables

1 boneless beef chuck arm pot roast (3 to 3 1/2 pounds)
1 tablespoon vegetable oil
8 small red-skinned potatoes, halved
2 large carrots, cut into 2 1/2 x 1/2-inch pieces
2 large parsnips, cut into 2 1/2 x 1/2-inch pieces
1 small leek, cut into 1 1/2-inch pieces
1 1/2 tablespoons cornstarch dissolved in 3 tablespoons water

Seasoning:
1 teaspoon dried oregano
1 clove garlic, minced
1/2 teaspoon each salt and lemon pepper
Combine seasoning ingredients; press onto beef pot roast. Heat oil in Dutch oven over medium heat until hot. Brown pot roast. Pour off drippings.
Add 3/4 cup water; bring to a boil. Reduce heat; cover tightly and simmer 2 hours. Add vegetables; continue cooking, covered, 30 to 45 minutes or until pot roast and vegetables are fork-tender. Remove pot roast and vegetables; keep warm.
Skim fat from cooking liquid. Measure and return 2 cups cooking liquid to Dutch oven. Stir in cornstarch mixture; cook and stir 1 minute or until thickened and bubbly. Carve pot roast. Serve with vegetables and sauce.
Makes 6 servings.

Anything I cook in the crock pot. Last night was fresh caught shrimp and beef sausage gumbo. Delish.

My Special Touch Buttermilk Pie recipe (secret)

CHICKEN SPINACH LASAGNA

1 pkg. frozen chopped spinach

(Cook in 1/2 c. boiling water & 1/4 tsp. salt):

3/4 tsp. salt
6 lasagna noodles
1/4 c. cornstarch
2 c. milk
1/2 c. chicken broth
1/8 tsp. pepper
Pinch nutmeg
6 tbsp. butter
2 tbsp. grated Parmesan cheese
1 egg, beaten
2 c. cooked chicken

Place in layers in pan and bake at 350 degrees for 30 minutes

king prawns wrapped in bacon fried in garlic butter and served on a bed of saffron rice

linguine aglio e olio

salt ,2 cloves of garlic,4 spoons of oil,a red chilly pepper,3 spoons of minced basil,600 gr linguine,black pepper

brown garlic and chilly pepper in a frying pan with oil. when pasta will be cooked add it in the frying pan and mixing add the minced basil. pour pasta in the dishes and add a lot of black pepper.

this is a fantastic recipe. we in italy some time add some minced tomatoes in the frying pan but without tomatoes the recipe is more good.

Right now it is split pea soup with ham.
