I use ground turkey to replace anything that would normally call for ground beef. It is MUCH more healthy and now that I have been using it for years- it's a lot tastier as well.

Use it for spaghetti, tacos (or taco salad), to make hamburgers, in breakfast for dinner burritos and anything else you can think of :)

Just use it in any recipe that you would normally use ground beef.

Bolognese, Chili, Lasagne

You can use it anyway that you'd use ground beef.
Brown it in oil, with some onions, & garlic, for starters.
You can turn it into spaghetti sauce with tomato sauce.
Or you can use any other kind of sauce you like.
Try mushroom soup, with chopped celery, diced peppers,
frozen peas, white rice, bake in a casserole at 350F.
Stir after 25 minutes, cook 45 minutes, until rice tender.

Yakisoba - a Japanese fried noodle dish.

You can usually find packets of yakisoba noodles with the sauce in the produce section of your store. Or, if you have an Asian market near you, you can just get a bottle of yakisoba sauce, and your favorite pre-cooked noodles. I like soba, myself, but udon, or even regular old ramen or spaghetti also works well. Just make sure the noodles have been cooked (boiled) so that they're soft before using them.

Cook the turkey until it's brown. Dump it out, but leave some grease in the pan.

Slice up a large carrot, an onion, and a green pepper and cook in the turkey grease until slightly soft.

Add the turkey back to the pan. Place the noodles on top and add about 1/2 cup of water to the pan. The steam will help loosen up the noodles and finish cooking them. Stir to mix the noodles, turkey and veggies. Add the flavoring packets or sauce to the pan, and stir until everything is good and coated. You want to keep cooking until the water has mostly evaporated, leaving everything coated with the sauce.

Serve and enjoy.

One way I really enjoy it is to use it to make meatballs. (2 egg whites, soft breadcrumbs, salt, pepper) Then I bake them in the oven on a cookie sheet at 400 F for 20 minutes (meatballs have a diameter of about an inch). Then, I put them in tomato-based barbecue sauce. I serve it over rice.

You can also make sausage patties. Mix 1 pound of ground turkey with 1/2 tsp salt (or sea salt), 1/8 tsp black pepper, 1/4 tsp crushed red pepper (if you don't like heat in your sausage, use 1/4 tsp black pepper and skip the red pepper), and 2 tsp of ground sage. Mix it all together really well with your hands. Cook as you would sausage patties.

GROUND TURKEY CABBAGE ROLLS

1 lb. head cabbage
2 lg. green peppers, cut up
butter
1 lb. ground turkey
Salt and pepper
3/4 c. chicken broth

Boil cabbage. Peel off 12 large leaves and save. Cut remaining cabbage small and cook in butter with green pepper and onion - about 20 minutes. Add ground turkey to cooked vegetables.
Make rolls with turkey mix and cooked cabbage leaves. Put in pan. Pour chicken broth over. Cook in oven, on top of stove or crock pot until done.

GROUND TURKEY CHILI

2 tbsp. vegetable oil
1/2 c. yellow onions, chopped
1 clove garlic, fresh, minced
2 tbsp. chopped green pepper
1 lb. Louise Rich ground turkey
3 tbsp. yellow mustard
1 tsp. salt
1/4 tsp. cayenne
3 tbsp. chili powder
2 tbsp. cumin
2 (14 oz.) cans tomatoes with juice
2 (14 oz.) cans kidney beans with juice

Place oil in a large heavy pan. When hot, saute the onions, garlic and green peppers until tender. Add the ground turkey and stir, when slightly cooked add mustard, salt, cayenne, chili powder and cumin. Mix well and add the tomatoes. Cover and simmer for 45 minutes. Add the beans with their liquid and cook uncovered for 15 minutes.

GROUND TURKEY GOULASH

12 oz. cooked ground turkey (1 lb. raw)
4 c. canned tomatoes, finely chopped
1/2 c. chopped green pepper
1 tbsp. instant minced onion
1 (4 oz.) can mushroom pieces with liquid (optional)
2 packets beef or chicken bouillon
3 oz. elbow macaroni, uncooked
Salt, pepper, onion powder and garlic powder to taste

Place cooked ground turkey (or 1 pound uncooked and browned) in a nonstick skillet with seasonings. Add tomatoes, green pepper, onion, mushrooms with liquid and bouillon; bring to a boil. Add macaroni (do not stir in) and continue to boil, uncovered, until macaroni absorbs all of the liquid and is tender, about 20 minutes.

* 3 cups uncooked wide egg noodles
* 1/2 pound ground turkey
* 1 medium onion, chopped
* 1 (15 ounce) can tomato sauce
* 1 teaspoon Italian seasoning
* 2/3 cup nonfat dry milk powder
* 1/2 cup water
* 4 ounces reduced-fat cream cheese, cubed
* 1 tablespoon minced fresh parsley
* 1 garlic clove, minced
* 1 1/4 cups shredded part-skim mozzarella cheese

DIRECTIONS

1. Cook noodles according to package directions. Meanwhile, in a large skillet, cook turkey and onion over medium heat until turkey is no longer pink; drain. Stir in tomato sauce and Italian seasoning. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. In a saucepan, combine milk powder, water, cream cheese, parsley and garlic. Cook and stir over medium heat until cream cheese is melted.

2. Drain noodles; add to cream cheese mixture. Transfer to an 8-in. square baking dish coated with nonstick cooking spray. Top with turkey mixture. Sprinkle with mozzarella cheese. Bake, uncovered, at 375 degrees F for 15-20 minutes or until cheese is melted.

Nutritional Analysis: One Serving equals 281 calories, 11 g fat (6 g saturated fat), 71 mg cholesterol, 676 mg sodium, 25 g carbohydrate, 2 g fiber, 21 g protein. Diabetic Exchanges: 2 fat, 1-1/2 starch, 1-1/2 lean meat.

INGREDIENTS

* 1 (8 ounce) package uncooked egg noodles
* 1 tablespoon vegetable oil
* 1 pound ground turkey
* 1 tablespoon minced onion
* 1 cube chicken bouillon, crumbled
* 1 (10.75 ounce) can condensed cream of mushroom soup
* 1/2 cup water
* 1 tablespoon paprika
* salt to taste

DIRECTIONS

1. Bring a pot of lightly salted water to a boil. Place the egg noodles in the pot, cook 6 to 8 minutes, until al dente, and drain.

2. Heat the oil in a skillet over medium heat. Place the turkey and onion in the skillet and cook until turkey is evenly brown and onion is tender. Mix in the bouillon.

3. Stir the cream of mushroom soup and water into the skillet. Cook and stir until heated through. Season with paprika and salt. Serve over the cooked egg noodles.

1 lb. ground turkey (try lean ground round)
1 ? Tbs. chili powder
? tsp. cumin
1 tsp. fajita seasoning
2 Tbs. garlic, minced
1 28oz. can diced tomatoes
1 15 oz. can whole kernel corn (try hominy, YUM!)
1 8 oz. can diced green chilies
1 ? c. shredded Colby cheddar cheese
? c. chicken broth
1 12 oz. box corn muffin mix (12 oz. Aunt Jemima corn bread mix from a 5 lb. bag)
? c. milk
2 Tbs. melted butter or vegetable oil
1 large egg

In a 12” deep Dutch oven, brown turkey with chili powder,
cumin, and minced garlic. Add tomatoes, corn and chilies. Stir well. Add broth, stir. Layer cheese over the top of meat mixture.
Mix corn bread mix, milk, butter, and egg. Spoon over turkey mix and cheese evenly. Cover and bake at about 375o for 35 to 45 minutes until bread is firm and baked through.
Serves 6
