How long do should you hang pheasant?!


Question: Depends how warm it is. Between 5 and 10 days is pretty normal (5 when warmer, 10 when colder). There used to be one of the big london hotels that allegedly would just hang them until the body dropped from the neck - but that seems a bit extreme to me.

BTW - Make sure you hang them individually though, never as a brace - you need the air to get to them.

Until you can pluck it easily...

Hang it until the tail feathers drop out

persnoal preferance but a minimum of three days. most say nine days at 10 deg c

If its guilty hang it til it stops breathing.

The longer you hang the pheasant, the stronger its meat will taste, but also the more toxins will have developed inside the animal. For health reasons : 3 days hanging before the plumage are a reasonable maximum.
