Yeast Rolls Recipe!?!?!
I am a very good baker. I am very experienced with making breads and rolls... BUT.. I can not make yeast rolls that even compare to those two restaurants. My yeast rolls are never super light or fluffy and yeastie... I just can't do it! It's always a major disappointment.
If you have a yeast roll that YOU have MADE and have had success and wish to pass on some tips, please post. Please do not search the internet for copycat recipes and cut and paste them. Quite honestly, I have done that and I can do that myself. They aren't so good.
So c'mon chefs..... Whatcha got.. :) THANK YOU IN ADVANCE.
Answers: I am addicted to the yeast rolls at Golden Corral or even Quincy's... smother them with honey butter.. OH MY GOSH.

FABULOUS FLUFFY ROLLS
1 pkg. dry yeast
1/4 c. warm water
1 c. scalded milk
1/2 c. sugar
1/2 c. oil
1 tsp. salt
1 tsp. vanilla
2 eggs, beaten
1/2 tsp. soda
4 c. flour
Dissolve yeast in 1/4 cup warm water. Add cooled, scalded milk, sugar, salt, oil, vanilla, soda, and eggs; add flour, mix well. Cover and let stand overnight. Next morning knead on lightly floured board, shape into desired shapes. Place 1-2 inches apart on greased baking sheet. Let rise several hours before baking or all day. Bake 12-15 minutes at 350 degrees. These stay light and delicious no matter how long you let them rise.

Yeast Rolls
2 (1/4 ounce) packets yeast
1/4 cup warm water
1/2 cup sugar, divided
1 cup milk, scalded
1/4 cup shortening
2 teaspoons salt
2 eggs
5 cups flour (approx.)
Dissolve yeast and 2 teaspoons sugar in warm water and let rise – be sure to use large enough container.
Add remaining sugar, shortening and salt to scalded milk and stir to dissolve.*.
Add flour until it falls off in sheets. At this point, add the 2 eggs and yeast. Mix well and begin adding additional flour until dough reaches desired consistency. Knead a few minutes.
Lightly spray a bowl with cooking spray. Place dough in bowl, turn so the top has some of the spray on it, and let it rise until doubled.
Shape into rolls of your choice and let rise again. (Lightly grease your baking pans or sheet).
Bake in 400 degree oven for approximately 10 minutes.
*Note: At this point, I put this mixture in my mixer and finish it off in it.
The number of rolls will depend on what shape you make them. I usually get 16 crescent rolls.
