Cheap vegan family recipe?!

This is fairly inexpensive and can be used to get rid of leftovers from the weeks meals. Any combination of ingredients will make a good pea patty:

1 tablespoon olive oil, plus 1 to 2 additional tablespoons for sauteing
1/2 cup chopped onion
1/2 cup chopped celery
4 ounces chopped mushrooms
2 teaspoons finely garlic
3 cups vegetable stock
1 cup dry split green or yellow peas
1/2 cup dry brown rice or 1/2cup + 3 Tbs white rice
1 teaspoon ground paprika
1 teaspoon ground cumin
2 tablespoons fresh italian parsley
1/4 teaspoon cayanne
salt and pepper to taste
3/4 cup plain dry bread crumbs
1/4 cup panko or bread crumbs to coat.

Sweat onion, celery, mushrooms and garlic. Add the stock, peas, rice, and spices. Cook for 1 hour or until the rice and peas are tender.

Remove from heat and process in a machine until mixed but not runny. Add breadcrumbs until a bit stiff. At this point it is best to refrigerate over night. If there is not enough time then...,

Shape into rounds and coat with the panko. Fry in nut oil for about 4 minutes on each side over medium heat.
