Savory Meat Loaf
1 1/2 pounds lean ground beef
1 cup milk
1 tablespoon Worcestershire sauce
1 teaspoon chopped fresh sage leaves or 1/4 teaspoon dried sage leaves
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 garlic clove, finely chopped or 1/8 teaspoon garlic powder
1 egg
3 slices bread, torn into small pieces
1 small onion, chopped (1/4 cup)
1/2 cup ketchup, chili sauce or barbecue sauce
Heat oven to 350°F.
Mix all ingredients except ketchup. Spread mixture in ungreased loaf pan, 8 1/2x4 1/2x2 1/2 or 9x5x3 inches, or shape into 9x5-inch loaf in ungreased rectangular pan, 13x9x2 inches. Spread ketchup over top.
Insert meat thermometer so tip is in center of loaf. Bake uncovered 1 hour to 1 hour 15 minutes or until thermometer reads 160°F.

Old-fashioned Meat Loaf

1 pound ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats

Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard

Preheat oven to 375 degrees F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.

Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.

Meatloaf with Tomato Relish

Tomato Relish:
Extra-virgin olive oil
1 onion, finely diced
2 garlic cloves, minced
2 bay leaves
2 red bell peppers, cored, seeded, and finely diced
2 tomatoes, halved, seeded, and finely diced
1/4 cup chopped fresh flat-leaf parsley
1 (12-ounce) bottle ketchup
1 tablespoon Worcestershire sauce
Sea salt and freshly ground black pepper

Meatloaf:
3 slices white bread, crusts removed, torn into chunks by hand
1/4 cup whole milk
1 1/2 pounds ground beef
1 pound ground pork
2 eggs
Leaves from 2 fresh thyme sprigs
Salt and freshly ground black pepper
3 to 4 bacon slices

Preheat the oven to 350 degrees F.
Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.

Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.

This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.

Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.

Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side.

Burger, cracker crumbs, eggs, ketchup, yellow mustard (just a squirt) and onions. Bake at 375 for 40 minutes or until clear juices flow.

Try forming a chunk of your favorite cheese in the middle before you bake it :-)

Although there are variations on my meatloaf, here's my favorite recipe:

2 lbs lean ground beef
2 eggs, beaten
1 cup Italian bread crumbs
3 T Worcestershire sauce
1/2 tsp fresh ground pepper
2 packages Liptson's Herb and Garlic Soup mix (if you can't find it, then add 1 tsp salt, 1/2 tsp celery salt, and 1/2 tsp onion salt)
1 15 oz can diced tomatos
5 slices platter bacon
1/2 yellow onion, chopped
3 T brown sugar
1 T dijon mustard

Mix first 6 ingrediants and set aside. In skillet, saute onions and chopped bacon until cooked. Add tomatos and simmer until reduced. Take half of the mixture and add to beef mixture. Mix well. Form into a loaf and place in baking dish. In remaining tomato bacon mixture, add brown sugar and dijon mustard. Stir and simmer for 5 minutes. Pour over top of meatloaf, cover and bake at 350 degrees for 1 hour. Remove foil and let sit for 15 minutes before serving. This is great with mashed potatos and roasted veges.

All these sound good. I use tomato sauce or soup in mine. I also cover the top with catsup and raw bacon sleces! Then bake, uncovered.

Lipton Superior Meat Loaf

1 envelope Lipton? Recipe Secrets? Onion Soup Mix
2 lbs. ground beef
3/4 cup plain dry bread crumbs*
2 eggs
3/4 cup water
1/3 cup ketchup

1. Preheat oven to 350°. In large bowl, combine all ingredients.

2. In 13 x 9-inch baking or roasting pan, shape into loaf.

3. Bake uncovered 1 hour or until done. Let stand 10 minutes before serving.

*Substitution: Use 1-1/2 cups fresh bread crumbs or 5 slices fresh bread, cubed.
