I really need some cooking advice! Can you help me?!


Question: We are having a family gathering next weekend and on Saturday I am suppose to prepare the breakfast. I need something I can fix ahead of time and it still taste wonderful and everyone will enjoy it. I will have no problem with the juice , coffee and things like that. I just need the main dishes or dish. Any ideas????

Do Ahead Breakfast Bake

1 cup diced fully cooked ham (6 ounces)
2 packages Betty Crocker (or your brand) hash brown potatoes
1 medium green bell pepper, chopped (1 cup)
1 tablespoon instant chopped onion
2 cups shredded Cheddar cheese (8 ounces)
1 cup Original Bisquick? mix
3 cups milk
1/2 teaspoon pepper
4 eggs
Heat oven to 375oF. Grease rectangular baking dish, 13x9x2 inches.
Layer ham, potatoes, bell pepper, onion and 1 cup of the cheese in baking dish. Stir Bisquick mix, milk, pepper and eggs until blended. Pour into baking dish; sprinkle with remaining cheese. Cover and refrigerate at least 4 hours but no longer than 24 hours.
Bake uncovered 30 to 35 minutes or until light golden brown around edges and cheese is melted. Let stand 10 minutes.

I would go with a quiche. Just prepare the crust and the filling separately store overnight, then combine and bake in the morning. Yum.

Quiche'....made cooked, and reheated in the microwave.....

Weet-Bix and canned fruit can be done in seconds, and any other cereal.

There are many breakfast casserole recipes out there. A lot of them can be prepared the day before, then baked that morning.
Another idea might be to have a "burrito buffet". Serve tortillas to fill with...sausage, bacon, potato, eggs, chorizo, cheese, salsa...

How many people are you going to feed? If it's not too many you could try a strata. It's like a cross between french toast and an omelet, and it's made ahead of time and kept in the refrigerator over night. The one I used to make had sauted vegetables and cheese, layered between bread layed out in a big baking dish. You pour a mixture of eggs and milk over the top and stick it in the refrigerator. The next morning, you bake it in the oven. If there are some small children, perhaps you could make regualr french toast for them.

****Baked French Toast Casserole with Maple Syrup

1 loaf French bread (13 to 16 ounces)
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows
Maple syrup
Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.
The next day, preheat oven to 350 degrees F.
Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.
Praline Topping:
1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.


Sausage Muffins

1 Pound Ground Sausage, Uncooked
3 Cup Bisquick
1 1/2 Cup Cheddar Cheese, shredded
1 Each Cheddar Cheese Condensed soup
3/4 Cup Water

Instructions

1. Cook sausage in a large skillet, stirring until it crumbles and is no
longer pink. Drain and cool.
2. Combine sausage. Baking mix. & shredded cheese in a large bowl; make a
well in center of mixture.
3.Stir together soup and ? c water, add to sausage mixture, stirring just
until dry ingredients are moistened. Spoon into lightly greased muffin pans,
filling to top of cups.

4. Bake at 375 degrees for 20 to 25 mins or until lightly browned.
Makes 15 muffins

go with simple stuff that doesnt take much time to prepare. and since it's a family reunion, make it interactive and involve everyone!!
1) provide some nice hot toast with a choice of butter or preserves
2) eggs - anyway that they want- scrambled, boiled, fried, poached or as an omelette (you can provide them with cheese and bacon and veggies to combine in)
3) pancakes - you can make the batter ahead of time and store it in the freezer. they can be made nice and hot and served with syrup and butter
4) fresh fruit
5) a choice of breakfast cereals

i am sure it'll be fun enough having the whole family around you - just keep the spirit going and things will be fine!!

That's a lot of people.... you might try this breakfast casserole. It is supposed to be made th enight before, then baked in the morning.

Southwest Breakfast Casserole (says 8 servings, I would thing 10-12 considering toast/bagels/danish/muffins fruit etc. you may serve on the side)

A great way to feed a hungry crowd for breakfast, this can be made ahead and put in the oven right before your guests arrive. Also great for Potlucks!

6 slices white bread, crust removed
1 lb pork sausage
4 cups Colby or Monterrey jack cheese
6 eggs
2 (4 ounce) cans diced green chilies
1 teaspoon salt
1 teaspoon dry mustard
2 cups half-and-half
butter or margarine, softened

1. Lightly butter both side of bread slices and place in 9x13-inch baking dish.
2. In nonstick skillet, over medium-high heat, brown beef sausage; drain well and pat with paper towels. Sprinkle sausage over bread slices.
3. Sprinkle cheese over sausage. Follow with a layer of chopped green chilies.
4. In medium bowl, beat eggs lightly. Add salt, dry mustard and half-and-half. Mix thoroughly. Pour over casserole.
5. Cover with foil and refrigerate overnight.
6. To bake, preheat oven to 350°F and bake casserole 45 minutes, or until bubbly and lightly browned. Allow to stand 15 minutes to set. Cut into squares and serve with picante sauce on the side.
