7-oz can SPAM, cubed 1/4"
6 eggs
3 tbsp butter
1/2 cup chopped onion
1/2 cup chopped green pepper
2 medium potatoes, peeled and
cubed 1/4"
10 pitted black olives, chopped
2 tbsp water
1/4 tsp pepper
In 10-inch omelet pan or skilet melt 2 tbsp butter over medium heat.
Add onion, green pepper and potatoes; cook over medium heat, stirring occasionally, until vegetables are crisply tender (5 to 7 minutes).
Add SPAM and olives; continue cooking until SPAM is heated through.
Loosen sauteed ingredients from bottom of pan; add remaining 1 tbsp butter.
Tilt pan to cover bottom with butter.
In small bowl mix eggs, water, and pepper; pour over SPAM mixture.
Cover; cook over low heat 12 to 15 minutes or until egg mixture is set on top.
With pancake turner, loosen edges and bottom; invert onto serving platter.
Yield: 6 servings.
Cornbread brocolli pie
10-oz pkg frozen broccoli spears
thawed and drained
8 1/2-oz pkg cornbread mix
12-oz can SPAM, cubed 1/2"
1 1/2 cup shredded cheddar cheese
Heat oven to 400. Prepare cornbread according to package directions.
Stir in SPAM. Spread into greased 9" pie plate.
Bake for 15 to 20 minutes or until cornbread is almost done. Arrange broccoli spears on top of cornbread; sprinkle with cheese.
Return to oven; continue baking for 5 to 10 minutes or until cheese is melted and cornbread is completely baked.
Yield: 6 servings
anything you do with regular ham you can do with spam.

The Best Spam Fried Rice!!
4 1/2 cups dry rice, cooked and cooled (preferably day old)
6-7 eggs, with a splash water, scrambled
1 (11 ounce) can spam lite, diced
1 yellow onion, diced
12 ounces frozen peas and carrots, thawed
Sauce
1 cup aloha shoyu soy sauce (or Kikkoman soy sauce, just use a bit more sugar to sweeten)
4-5 tablespoons sugar, for aloha shoyu or 6-7 tablespoons for Kikkoman soy sauce
4-5 garlic cloves, minced
2 tablespoons oyster sauce
1 teaspoon sesame oil

Scramble eggs in about 1/2 tablespoon of vegetable oil in a wok on medium high heat. When done, set aside in a bowl.
Place another tablespoon of oil in wok and sauté onions and Spam on medium high heat. When golden & starting to crisp on the outsides add the thawed peas and carrots.
Combine ingredients for the sauce and stir until sugar is dissolved, tasting along the way to be sure it is sweet enough for you. Add to the vegetables and boil on high until the sauce reduces to a glaze.
Slowly add the cooled rice and eggs to the vegetable mixture, being sure to break up any clumps of rice and so the coloring is even. Warm the rice through and serve.

Foil dinner on the grill
1/4 cup brown sugar
8 new potatoes, sliced 1/4"
1/4 cup beer
2 cups carrots, sliced 1/4"
1/4 cup stone ground mustard
1 large onion, thinly sliced
1/2 tsp celery seed
12-oz can SPAM, cut into 12 slices
In small bowl combine brown sugar, beer, mustard, and celery seed. Divide vegetables and SPAM into equal portions, arranging each portion on a 18x12" piece of foil; drizzle mustard sauce over each and fold up to form 5x4" packet, sealing well. Place over medium hot coals, grilling 45 to 0 minutes or until vegetables are tender. Yield: 6 servings.

SPAM BURGERS
1 can Spam
1 med. green pepper
1 med. onion
1/4 lb. butter
1/2 lb. Velveeta cheese
2 tbsp. catsup
Grind together Spam, green pepper and onion. Melt together butter and cheese. Add catsup and mix with Spam. Spread over hamburger buns and toast in hot oven or under broiler.

Buy him some "Potted Meat Product" that you will find in the tuna section of a grocery store. Tell him it's just like that crap and refuse to make it. That stuff is just nasty.....just MO.

My dad always puts spam in stuffed peppers. He cuts it up in little squares and then cooks cheesy rice on the stove. After the rice is done cooking, mix the spam in with it. Then after you cook the peppers, stuff the spam and rice inside the peppers. Velveeta shells and cheese goes really good with this.
Believe me....it is soooo good!
I just slice about 1/4" thick, lightly flour and fry in butter. Sometimes, I melt cheese on top and make a sandwich, w/ mustard.
try slicing it really thin, frying until crispy (no added oil), and making sandwiches that way. Same taste, but without the mushy texture.

eww i dont like it either, But my father made this recipe with spam cooked and that is ok to eat, Its Cheesy potatoes and Its hasbrown style, with brocolie florets, pick up a bag of oreida hash browns , make it up as directed, Put in a cassorole dish, sprinkle sharp shredded cheese in it, and the brolcoli, then slice the package of spam, and fry the spam in the frying pan, when done, cut up spam in small pieces and add to the poatoes , now bake for 350 to 375 for a half hour till cheese melts
