A double boiler is a deep saucepan or pot in which another, shallower one fits inside. You put water in the bottom pot. It is used for things that shouldn't be cooked on direct (stove) heat, such as melting chocolate, for one example.

it's also known as bain marie..

It's hard to find a double boiler for home use any more, but you can get by if you really need one.

Get a quart sauce pan and put about a cup to 1-1/2 cups of water in it, and bring it to a slow boil.

You then place what you need to melt/cook in a stainless steel bowl, and place over the water, and melt/mix according to your recipe.

Be sure to use a towel or pot holder so ya don't burn yourself!
