I have a rock lobster tail-- which side do i split?!
Answers: one side has just shell- the other has legs- help!! !
hold a cleaver on the bottom side (ribs showing) of the shell. Place the other hand on top edge and press down firmly, cracking through the shell, from tail to eye sockets. Separate shell somewhat, and remove meat, in one piece. Turn shell over and place meat on top. Place in metal pie pan, adding 1 inch water in pan. Add one tablespoom butter atop tail and sprinkle lightly with paprika. Broil.
