Answers: no don't add flour, just eggs and your favorite ingredients.
I would assume the cooking makes it firm, as it does on the stove. Adding flour would make it something closer to a nasty pancake.
no you might break it. just remove the yolk from the white carefully then whisk the egg white with a soft whisker continuosly in a salad bowl till the eggwhite become frothy(you have to be patient for this (electric mixer is easy for this)
then pour the yolk little by little season to taste with salt and pepper. reheat your non stick pan in a lower flame add a tablespon of cooking oil when almost hot drop the mixture( egg batter) till last (same like a pan cake) then place your ingredients carefully then fold (you should be smart upon lifting the egg ) same slice with your bread.
