There is not much meat on one. Most people eating squirrel don't eat it for the meat. They use it to make gravy.

It should be braised. Too lean and tough for dry cooking.

The best way to cook a squirrel is to cut it up and fry it or put it in a stew.

No matter how you cook it, par boil first. Squirrel gravy and dumplings, I believe, is the best way to cook squirrel.
Unless you are a cat or a bird of prey....you need several to make a meal !
I would freeze them until I had 6,,, then sear 3 at a time in a
large pot until they were well browned,then place them all in the pot, cover, and slow cook with a little wine and stock until the meat fell off the bones ( it never completely FELL OFF, some picking was needed )
Keep the meat separate, while adding diced veggies to the broth. Thicken with roux or a flour slurry and add the reserved meat when nearly done...(The liquid boils to eliminate the taste of the flour )
Put the thickened mixture into the bottom crust of a pot pie and top with crust. Bake until crust is golden and munch!!!!
Soak the pieces in buttermilk for an hour or so. Then flour, season and fry. I usually add a few slices of onion while frying. It takes away the wild taste and I leave it in the grease while I make gravy. YUM! I'm a country girl!
You can, but you have to boil it till it get tender, then you can grill it. the best was is to slow cook in season water until it tender, then make a grave, and cook some rice. fix some green with it you got one hell of a meal Ok yes cornbread
My dad lived during the Depression in Northern Minnesota in a dirt floor house with 9 brothers and his parents. He remembers hunting for it then his mom would fry or cook it like you would a pot roast. With ten sons living at home during those difficult times my grandparents did serve it often. Grandma lived to 100 and all the boys are in their 80 - 90's so must not have been harmful!

Salt and pepper squirrel to taste. Cook on grill basting with beer until squirrel is about ? done. Baste with barbecue sauce until squirrel is completely done.
I tend to favor young squirrel when cooking them up on a grill. I always mark on the outside of my freezer bags if I believe the squirrel I harvested was older or younger so that I can pick a recipe that will better fit and make for a much more enjoyable meal. I also always put the date when the squirrel was harvested on the bag, so that the squirrels can be properly rotated and used in order of how they were harvested.
