I need ideas for Thanksgiving baking?!
Answers: I'm trying to bake something to give to my neighbors for Thanksgiving, but I need some ideas. I suppose I could make a boring pie, but I want it to look neat in small portions, not having to cut it and make it messy. Any ideas?
Make sweet potato muffins. I use sweet potato pancake mix, and add a pieces of cooked sweet potato in the middle of each muffin before baking. Very delish, and different. Use a can of cooked sweet potato, drain and rinsed.
Tarts, mini cheesecakes, or mini pies. I sell and give away mini cheesecakes for xmas every year.
You can't go wrong with these tasty mini pecan treats.
Pecan Tassies
Crust
1 (3 ounce) package cream cheese, softened
1/2 cup butter
1 cup flour
Filling
1 egg
3/4 cup light brown sugar
1 teaspoon vanilla
3/4 cup chopped pecans
Crust---------------.
Blend cream cheese and butter, add flour.
Refrigerate for about 30 minutes.
Divide dough in 24 balls and press in mini muffin pans.
Filling---------------.
Combine egg, brown sugar, vanilla and nuts.
Fill cups 3/4 full.
Bake ate 325 degrees for 25 to 30 minutes or until light brown.
Cool 5 minutes and remove from pans.

PEACH SWIRL COBBLER
1 can (21 oz.) peach pie filling
3 tbsp. sugar mixed with 1 tsp. cinnamon
2 tbsp. butter
1 can cinnamon rolls
Whipped cream
Pour peaches into buttered shallow baking dish or 8 inch square pan. Dot with butter and sprinkle with cinnamon and sugar. Place cinnamon rolls on top. Bake at 375 degrees for 35 minutes. Drizzle with frosting from can of rolls. Serve warm with whipped cream. Serves 9.
