What meals can I cook using bacon?!


Question: I have bacon left over that i need to use up today so i was going to cook a fry up for dinner! I would prefer something healthy but cant for the life of me think of anything! Can you help?

Do a tuna and pasta bake and chop up the bacon into the bake and it will give a lovely flavour. Add in some pieces of broccoli or peas. All healthy. Can't give you a recipe' but a white sauce is the other main ingredient.

Make a seven layer salad. Start with crispy lettuce like shredded iceberg, then layer defrosted green peas, sliced yellow onion, sliced green peppers, a layer of thousand island dressing, a layer of your favorite shredded cheese and the bacon chopped on top with scallions. Yum Yum!

Hash browns with bacon rolls

Serves 4



Preparation time less than 30 mins

Cooking time 10 to 30 mins







Ingredients
4 plum tomatoes
sea salt
freshly ground black pepper
8 thin rashers rindless bacon
1 tsp runny honey
6 medium potatoes
1 small onion
1 large free-range egg, beaten
1 tbsp plain flour
2 tbsp chopped herbs (e.g. thyme, rosemary or chives)
1 tbsp olive oil
3 tbsp vegetable oil
To serve
rosemary sprigs



Method
1.Preheat the oven to 200C/400F/Gas 6.
2. Cut the tomatoes in half lengthwise, season with salt and pepper, and arrange on a baking tray. Roll each of the bacon rashers into a tight roll and place on the same tray. Drizzle the bacon rolls with the honey and bake for 20 minutes or until the tomatoes are soft and the bacon is crisp.
3. Peel the potatoes and onion, coarsely grate them, then wrap in a clean cloth and squeeze out excess liquid. Place in a bowl, add the beaten egg, flour, chopped herbs, one teaspoon sea salt and olive oil, and stir well.
4. Heat one teaspoon vegetable oil in a frying pan until hot, and then add two heaped tablespoons of the potato mixture.
5. Squash them flat and fry gently on both sides until golden. Keep them warm in the oven while you cook the remaining hash browns, adding a little extra oil to the pan each time.
6. Serve the hash browns topped with the roasted tomato halves, crisp bacon rolls and rosemary.

Ingredients
1 can Refrigerated biscuits
6-8 Eggs
Shredded cheddar cheese
5 slices Crumbled, cooked bacon
(or bacon bits)
Can sausage gravy (optional)

Preparation
Flatten biscuits and cook according to directions. However, it won't take as long so watch them carefully. While the biscuits are baking, scramble your eggs leaving them a little runny.

Spread a small amount of sausage gravy on warm biscuits, if desired, or sprinkle cheese on warm biscuits, instead. Spread scrambled eggs on top of gravy (or cheese). Sprikle more cheese on top of eggs, if desired. Sprinkle crumbled bacon on top.

Bake just until cheese is melted. Enjoy!

egg and bacon quiche
8 rashers bacon (grilled crispy and cut small)
3 oz gruyere cheese
2 large eggs + 1 yolk
10 floz double cream
salt and pepper
pastry case

whisk eggs salt, pepper and cream together, add bacon, pour into pastry case, top with the cheese and bake in the oven (gas mark 5, 375°F (190°C) for 35 - 40 mins

risotto rustico
400 gr rice,150gr bacon,4 slices of scamorza cheese(or emmental cheese),1/2 onion,1 carrot,2 tomatoes,oil 1liter and half of broth,salt

mince onion,carrot and tomatoes and make little pieces of bacon. bronw the bacon in a pot with 3 spoons of oil for any minutes and add the vegetables. mix and brown,add 1 glass of broth and cook for 10 minute,add the rice and toast it for 1 minute,add salt and add little for time the hot broth . whem risotto will be cook add the slices of cheese,mix well and serve it.
