American Breakfast Sausage recipe, does anyone have one?!

1 ? lb ground pork
? tsp salt
? tsp freshly ground pepper
1 tsp dried sage
1 tsp dried marjoram

1) In a large bowl, combine the pork, salt, pepper, sage and marjoram and mix well with a fork. Knead the sausage into a large ball. (Taste for seasoning by pinching off an olive-size piece of sausage and placing it in a small nonstick skillet. Cook the small piece over medium heat, turning often, until it's no longer pink in the center, 3 to 5 minutes. Taste, then add additional salt, pepper or herbs to the sausage mixture as desired.)

2) Cover the bowl with plastic wrap and chill the uncooked sausage mixture for 1 hour. Using your hands, form the meat into 24 uniform balls, then flatten each into a patty.

3) Place 8 of the patties in a large nonstick skillet and cook over medium heat until browned and cooked through, about 5 minutes per side. Drain on paper towels, repeat with the remaining patties and serve.

I've made these innumerable times, and they are as good as anything storebought.

oh thats a hard one. I was gonna say go to wall mart and buy sum jimmy dean ( a brand of it ) and put it in the skillet and cook it up. lol

Breakfast Sausage Recipe

2 pounds pork butt (2 1/2 pounds with bone), diced into 1/4-inch pieces
1/2 pound fat back, diced into 1/4-inch pieces
2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
2 teaspoons finely chopped fresh sage leaves
2 teaspoons finely chopped fresh thyme leaves
1/2 teaspoon finely chopped fresh rosemary leaves
1 tablespoon light brown sugar
1/2 teaspoon fresh grated nutmeg
1/2 teaspoon cayenne pepper
1/2 teaspoon red pepper flakes
Special equipment: meat grinder

Combine diced pork with all other ingredients and chill for 1 hour. Using the fine blade of a grinder, grind the pork. Form into 1-inch rounds. Refrigerate and use within 1 week or freeze for up to 3 months. For immediate use, saute patties over medium-low heat in a non-stick pan. Saute until brown and cooked through, approximately 10 to 15 minutes.

any sausage you had,,, has a proprietary recipe..
and for sure a secret ingredient.
But your best bet is to buy it online.
the cost of the equipment alone is not worth it.
meat ain't cheep and spice & herbs outrageous ..!!

BREAKFAST CASSEROLE

8 to 12 slices cubed bread, no crusts
6 eggs
3 c. milk
1/2 lb. grated American cheese
1 c. cubed ham or cooked sausage or bacon

Put bread cubes in a greased 9 x 13 inch pan. Place meat and cheese on top of bread. Beat eggs; mix with milk and pour over ingredients in pan. Let stand in refrigerator overnight. Bake at 325 degrees for 1 hour or until set.
Serves 8.
