Recipe for left over egg yolks and chocolate?!

I would make a rich chocolate mousse dessert. with that many yolks if well beaten you will get the silkiest and most delicate mousse you had ever tasted.
You can make many desserts with it such as:
individual cups with mousse or mousse in the bottom, a ball of ice cream and more mousse on it.
You can make one large or individual desserts with a thin layer (or remains of) biscuit/angel food cake making like layers of chopped biscuits and mousse (it can be chocolate cookies or biscuit too)
you can make a nice chocolate layered cake filled and covered with the mousse
you can make a frozen brownie cake like making a brownie base and then adding the mousse and letting it freeze like a frozen cake.
etc.
For the mousse you will need
8 egg yolks
200 grs or more of chocolate
250 grs of confectioners sugar (or regular sugar) (you can also process some reg sugar in a food processor to obtain confectioners sugar. Confectioners sugar dissolves faster in these kind of preparations.
you can also use some brown sugar instead.
250 grs milk cream or heavy cream.
chopped nuts or almonds (optional)
80 gr butter
beat the yolks and the sugar well until they reach a light creamy color and thick texture. It may take you several minutes but it is the key to this recipe. This is what will give the mousse that special texture.
Melt the chocolate with the butter. You can place both ingredients in a bowl and put them in the microwave for periods of 30 secs, stiring in every time until the choco is melted but do not let it burn.
Or you can put it in a bowl and place it over bath maria until it melts.
Or just take a kettle of boiling water, put the boiling water in a bowl. Place the chocolate on the bottom of the bowl and let it still for some minutes. with the tip of a knife you can pinch it to see if it is soft already. Once this happens remove the water from the bowl and your chocolate will be melted (again, keep it still do not move it or it will mix with the water). This is the simplest way to melt chocolate for cakes. I learnt it from a german baker. Sounds difficult but it is the easiest of all ways. In this case you will have to add the butter melted to the chocolate after the water has been taken out.
Mix the egg yolks with the melted choco and butter.
Whip the cream to half point. This is when it is thick but still fluid.
i recommend you to beat the cream over a bowl with ice to keep it cool and make it reach its best point better. This will ensure the success of your beating and avoid the cream from curdling earlier.
Do not overbeat the cream because you still have to stir it in the yolks and choco mix. This is like keep beating the cream and it will get to butter. There is no way back if that happens.
Add the chopped nuts or almonds as desired and you may also scent this mousse with any scent of your taste (candied and chopped orange peels, vainilla, cardamom, etc)
