Delicious Beef Taco
You will need:
Ground beef
1 Package Taco Bell Fajita seasoning
1/2 Can low-sodium beef broth
Any Taco toppers you and your kids enjoy
Lettuce
Cheese
Sour Cream
Guacamole
Avocado Slices
Sweet Peppers-Red/Yellow/Green Bell
Hot Peppers-Jalapeno, Banana, etc.
Whatever veggies you guys like
Veggie/canola oil
Hard tacos/Flour tortillas
Put beef in a bowl and sprinkle about half of the seasoning on the meat, and mix without over-mixing the beef-just enough to get the seasoning spread throughout.
Heat a large sautee pan, then add enough vegetable/canola oil to just cover the bottom of the pan.
-If you'd like you could finely chop/dice, some veggies your kids like-celery, carrot, etc. and add to the pan along with beef in next step- remember small pieces for the veg, because you don't want to overcook the beef. (Good way to get in some tasty veggies).
Add the seasoned beef (& diced veggies) and brown, mixing frequently with a wooden spoon/wooden spatula.
Add about about 1/2 can of low sodium beef broth, and reduce until you have a nice-consistency sauce (and veggies are soft with a little bite). Use the spoon to get up any bits that might have stuck to the pan.
Add the rest of the seasoning to the beef and veggies, and combine thoroughly.
While the beef (& veg) reduce, you can get all of your toppers ready.
I would strain most of the sauce out of the beef, so it's a little less messy for the kids. You could always serve the sauce on the side, for extra flavor.
Your kids will have a good time making this meal their own, creating their own masterpiece meals.
Hope this helps. Happy cooking.
