How to make red potatoes?!
Answers: I like the skin of the red potatoes in my mashed potatoes. I was just wondering do you skin some of them? Or do you just leave the skin and cook them like that. Will that be to much skin?
ROASTED RED POTATOES
4 to 5 red potatoes, medium size
1/2 stick of butter
3 tbsp. Lawry's seasoned salt
2 tsp. white pepper
2 tsp. chives, chopped
2 tsp. dill weed
Preheat oven to 350 degrees. Wash and scrub 4 to 5 medium-size red potatoes. Chop potatoes into small pieces approximately 1/2 to 3/4 inch in length and width. Place chopped potatoes into ungreased glass baking dish approximately 8 x 12 inches. Cut one stick of butter into 1/4 inch slices and place over potatoes so that potatoes are covered. Sprinkle 2 tablespoons Lawry's seasoned salt over butter. Sprinkle 3 teaspoons white pepper, chopped chives and dill weed over salt. Roast in oven 45 to 60 minutes, turning potatoes every 15 minutes. Great with roast beef and chicken.

Red potatoes
Cheddar cheese
Fresh chives
Sour cream
Freshly grated black pepper
Boil red potatoes until soft (skin left on). Drain and cool. Slice potatoes into 1/4 inch slices. Coat a shallow baking dish with cooking spray. Spread potato slices one layer thick in dish and cover with Cheddar cheese. Sprinkle with chives. Bake in preheated oven at 400 degrees until cheese is bubbly. Serve with sour cream and pepper.

MASHED POTATO
How to make mashed potatoes that are whipped
smooth, buttery, rich and creamy.

Recipe Ingredients;
2 pounds of red potatoes, with or without
skins on
? cup of regular whole milk
6 tablespoons of butter
1 teaspoon salt OR ? teaspoon
celery salt for extra flavor
Optional; Pinch white pepper
Optional; 1/8 teaspoon garlic powder
Method;
Cut up potatoes, place them in a large enough pan, cover them completely with water. Cover pot but leave an edge cracked for some steam to escape, boil on medium to medium high ONLY until they are soft enough to break apart with a fork. Drain all water off cooked potatoes and transfer potatoes to a glass or clay bowl.
Working quickly while potatoes are still steamy hot, push down and break up boiled potatoes with a wooden spoon or the blades of a hand held mixer before turning on the electric power. Now add the butter scattered in pieces, sprinkle on the salt, white pepper and garlic. Add ? of the milk and power up the hand mixer to medium high speed, slowly add the rest of milk as you mix until it is smooth or creamy enough for you. Keep adding extra milk in small amounts if needed.
Serve immediately or keep the bowl warm in an oven set at 180-F
Optional; For delicious cheesy mashed potatoes, add 3/4 cup shredded Colby or Longhorn Cheddar Cheese during the mashing.
Makes 4-5 servings
I never peel red potatos , I just boil them till soft about 10 min.? check with fork , if they split, they are done.Mash , add butter salt garlic , enjoy!! Awesome, make some for me too!!
Don't peel or cut them (assuming they are new red potatoes). If they are full size red potatoes, quarter them.
Boil them until tender when pricked with a knife. Drain and smash with salt, pepper (and cream if you want to kick up the flavor and of course calories)
Wash them very good and then cut off anything that is bad or any eyes( if they have any) cut into chunks and boil. I do not like them for mashed potatoes myself, I prefer them in potato salad.
They can have to much skin for mashed potatoes for some people.
It won't be too much skin. Just boil them and then mash them....
Red potato skins are thin so there won't be to much skin there. I don't peel mine. I just boil and mash or fry them up. What ever you like.
