What is the BEST cookbook for healthy quick inexpensive yet yummy family recipies??!


Question: I have one school aged child and one toddler as well as a husband who could eat a horse. We usually have stews, pasta, lasagne in winter and bbqs in summer. I need to cook something new and I found myself confused over the 100s of cookbooks out there. Can anyone suggest any books???

Busy Mom's Make it Quick by nutritionist Jyl Steinbeck is a good one. I checked it out at the local library. Most of the recipes use easy ingredients that you can get ahead of time and store in the freezer, such as pre cooked chicken strips. Or frozen chopped onions and green peppers in a bag, instead of suggesting that you buy a pepper and onion and take the time to chop them, and then do the extra dishes. I really appreciated this feaure of the new cookbooks i am finding at the library. Jyl Steinbeck also has a slow cooker (crockpot) cookbook.
MONEY AND TIME SAVING TIP:
A lot of recipes can be made quickly with the pre-cooked chicken strips that you buy at the store in the meat case in vacuum sealed bags (Tyson makes them). It is totally cheaper to buy fresh raw boneless skinless Chicken breasts, especially when they are on sale, and cook them ahead of time and freeze them. Last month our local store had the boneless skinless breasts on sale for $1.99 a pound, so i bought 15 pounds, trimmed and sliced in all into strips and cubes, seasoned some of it, left some plain for the baby, and cooked it in Pam on the skillet. Once it cooled I measured it into 2 cup portions into freezer bags and stored it for future use in casseroles, chicken salad and chicken helper. This has been such a time saver!
